Made this and tried it tonight. It’s so good I almost cried. I’ve been gf for several years now and this is by far the best I’ve ever had. I began my starter about 3 weeks ago and had a few failed recipes but this will be my go to from now on! Thank you for putting in the work and giving us the recipe!

Thank you for all these amazing gluten free recipes!! I have attempted this sourdough sandwich bread twice and although they both taste great, the loaves are heavy and dense. Any advice? I’m really hoping to perfect this.

Oh no! I've found that most of the time when this happens it's due to either under proofing or over proofing.

You are so right. The slices of GF bread in the store are so tiny, plus they charge way more money for the tiny loaf. I'm going to try some of your bread recipes and see what happens. Love your channel.

I also wanted to ask if you have an arancini recipe you could share? ( I can use the G/F sour dough bread for crumbing )

I don't have fine rice flour but I've got rice from the food pantry I've been trying to grind in a blender then sift. Its still pretty gritty. I'm thinking of next time cooking the ground up or whole rice first into like a rice porridge or simple cooked rice then blending to get a softer loaf. I'm not gluten free per day, but seems unfermented wheat and rice cause issues with my eczema so I'm making low gluten sourdough with things like rice or bean flour I make myself. I don't mind a denser loaf, but I do want better rise at the very least. I will say your dough looked almost batter like so maybe I need to have more liquid in mine as well as now adding a bit of baking powder. I tend to ferment my dough for at least 12-24 hours before baking, though the starter I'm currently got some on the counter I'm gonna ferment for 72. Definitely need to find tune my low gluten/gluten free sourdough. I made regular during the worst id COVID well enough but now I'm having to change things up.

I’m so sad !!! I made your multigrain bread flour & used it in the recipe, and everything was looking SO good ! But my bread rose so quick that it seeped a bit in between both bread pans and after the 15 minute mark, removing it split off the entire golden top of my bread :(((((( I think I’d have to try baking it for 15 minutes WITHOUT the cover and then adding it later on. But flavourwise, it’s terrific !

Oh no!! Well, I'm glad it tasted good at least. I'm sorry it was such a mess. You don't have to put the other pan on top to bake it. You can always add steam by either throwing a couple of ice cubes into the bottom of the oven quickly or pouring hot water into a shallow pan below the rack. I should have included that within the video. I'm so sorry!

I have found that the ONLY thing close to her bread flour blend is King Arthur bread flour. The main ingredient is GF wheat starch. (Okay for celiac, not okay for wheat allergy) Kim’s blend is heavy on the starch flour and hers is still better than King Arthur. I have not tried the King Arthur on this recipe.

Could you do a breakdown of price? As in, about how much it costs a loaf? My husband is celiac so we're going GF but the prices of store bought are killing me!

It really depends on so many things that it's hard to give an exact amount (there are so many different types of components and brands that one can use for the flour blend). I would estimate at anywhere between $3-$7 per loaf.

The crumb? Or the crust? I understand the crust being crispy and you'll find plenty of recipes of mine have a crisp crust. This is specifically mimicking a soft sandwich bread.

Is it possible to proof breads too long ? I made your Rye bread 1st time was amazing 2nd time I proofed for what seemed like 6 hours and it came out dense and flat as a board lol. Maybe I needed to proof longer ?

Yes, it is. There's a fine line between under proofed and over proofed and with gluten free breads, it's sometimes really hard to figure it out. I keep checking it at 30 minute intervals, especially in the warmer months, so it doesn't go too long and collapse.
