Hey I loved the video and will make some soba myself because of it, one minor advice concerning the video though, maybe cut the video so theres consistently a 1-2 second pause between segments. you tend to cut to quickly and thus you cut of your sentences sometimes, for example 4:18 you cut bonito fLAKE of.

as a farmer, if you've outdoor space, buckwheat will grow anytime during your main season (frost kills). it is EXTREMELY quick to germinate and establish, and it's ~30 days to bloom just a bit longer to seed. i grow it as a quick cover crop, so i want it killed while flowering but before the short window when it begins to seed; fallen seeds can act as a weed/competition in your garden. the bees LOVE it for forage. i personally think it smells like a sweet, flowery urine. cheers!

Love me some buckwheat honey...and I love anything buckwheat flour...and it's a cover crop that brings soil nutrients from deep to top soil AND it is easy to till a stand of buckwheat by hand so no machinery needed. AND you can make microwave heating pads with the seeds you have NOT ground into flour. Just saying...buckwheat rocks!

Leaving the noodles to soak in cold water will make them soggy, in Japan it is served in a bowl placed over a bowl of ice in the summer so they are chilled bot not soggy. Major respect for milling your own flour, I would love to give that a try one day.

Josh I would love to make this. Found this gem of a video. I actually really miss sometimes this style coming from the cabinet in your kitchen type video. Your new videos are missing something that was in these old videos. Obviously they are still fantastic and watch-worthy, but i donno somethings missing . I am going to try this-a like you’re a little higher percentage wheat flour. I’ve seen 0-20%. This should improve texture. I like the pasta roller idea too!

I just did the experiment today with the recipe, with my Ankarsrum bread machine and the hand hold pasta machine (like in the video). However, the result was that my noodles breaks after boiling, despite I made them wider instead of the thin version. Thinking back I think it could be due to: 1. I didn't use the hook to knead the dough and perhaps the default one is not strong enough for drier dough as such so it wasn't properly kneaded 2. I probably need to add more flour (I used bread flour and not all purpose flour) and not just follow the recipe's. The whole process turned to be a bit messy though so perhaps it's best that I try to knead by hand if I try again. We put two batches in the fridge to eat tmr and freeze one batch. We can see how that goes. Before when I made fresh paste, I would hang them to dry with paste hanger if I don't eat them immediately.

What do you suggest is the best way to keep the extra portions fresh for the next few days...should a cook them all immediately? Or similarly to fresh pasta, they can stay uncooked in the refrigerator for about 2-3 days? Thanks!

I got the pasta attachments for my kitchen aid stand mixer and the only part I want to keep from the set is the sheeting attachment, both cutting attachments (spaghetti and fettuccine) cut way to thin even when I sheeted the dough thicker, the texture was just way off. The hand crank that I also have seems to do a better job cutting the pastas. Hope this helps you!

I have the kitchen aid pasta roller for eight years now and I like them a lot and use them a ton. Especially because you can work faster than with a hand roller. Recently I bought the Philips pasta maker and it’s also pretty dope, it’s faster and you can make more shapes (especially since I buy bronze stencils from Italy). They are different, but I’m happy to own both because there are pretty severe food allergies in my family and i have to make everything by hand.

I'm curious as to why the need for all purpose flour, as traditional soba noodles just use buckwheat flour. Something about your process is creating a noodle that looks much different in texture. That being said, kudos for the homemade tsuyu, and happy birthday! Your videos are beautiful!

I think it´s because 100% soba are more difficult to make properly without tearing the dough in the process...so adding little bit of gluten (in normal flour) makes it easier to make :) but then it is not gluten-free...

I'm not able to get hold of all purpose flour due to stock shortages. Is it possible to make these with just the buckwheat flour? I also have some cornflour if that would help at all.

Han Louise late response but - unless you're willing/able to do some very tricky work, using only buckwheat flour would be nigh impossible. The all-purpose flour (or wheat flour generally) makes the soba easier to make by adding gluten. Without that added component it's very hard to get the noodles to form correctly, and usually requires a lot of expertise.
