- Peeling & Cleaning -
12 Black Tiger Prawns (280g/9.88 oz)
½ tsp Salt
1 tbsp Potato Starch
A sprinkle of Water
- Seasoning -
⅛ tsp Salt
A pinch of Pepper
1 tsp Sake
1 tbsp Egg White
1 tbsp Potato Starch
- Ebi Chili Sauce -
1 tbsp Vegetable Oil
1½ tbsp Chopped Ginger
1½ tbsp Chopped Garlic
1~1½ tsp Doubanjiang - Chili Bean Paste
2 tbsp Tomato Ketchup
100ml Chinese-style Chicken Stock (3.38 fl oz)
- follow the directions on the package of chicken stock powder
1 tbsp Sake
¼ tsp Salt
2 tsp Sugar
½ Naganegi - Long Green Onion
Potato Starch dissolved in Water
(1 tbsp Potato Starch + 2 tbsp Water)
½ tsp Vinegar

・ブラックタイガー:12尾(280g)
・塩:小1/2
・片栗粉:大1
・水:適量
<下味用>
・塩:小1/8
・コショウ:少々
・酒:小1
・卵白:大1
・片栗粉:大1
<ソース>
・油:大1
・しょうが(みじん切り):大1と1/2
・にんにく(みじん切り):大1と1/2
・豆板醤:小1〜1½
・トマトケチャップ:大2
・チキンスープ(中国風):100ml

・塩:小1/4
・砂糖:小2
・長ねぎ:1/2本
・水溶き片栗粉:片栗粉大1、水大2

The reason why she salted the prawns, put potato starch and water to just wash the prawns, it takes out the smell from the prawns if you do this, and that is the reason she did it. It is a fairly well known way to get rid of the fishy smell of prawns in Japan.

ThatCrazyStranger works on everything, including meats. However the reason to do this is because stir frying. Stir frying need a well balanced flavor from ever ingredient, and you don’t want the fishy flavor overpower the whole dish

I love the way the prawns change colour from a dull grey to a bright peach/coral when fried. Beautiful!

When I lived in Tokyo, there was this little Chinese restaurant in Shinjuku station that had the best Ebi Chili Sauce dish ever! Thank you for bringing back great memories. I am making this tonight.

I've been watching since close to the beginning. I can tell you put thought and detail into the camera angle, the organization structure of the preparation and cooking process. I learned I need to ponder how to better organize myself. Thank you very much for the insights! Looks so good!

This is my favorite cooking show. Lady demonstrates the dishes are not as complicated as we'd think. Francis (the dog) is as rapt as I am watching her preparation and cooking! Informative AND Entertaining. Perfection....

Wrote an extensive shopping list of the ingredients. Did not go to school so I'd have time to prepare this. Found ready-made ebi chili at the mall and bought it. 10/10 would cook again

I like this show. They don't just teach you how to put ingredients together. They teach you proper knifework too. I chop vegetables so much more quickly and precisely thanks to this show!

I highly recommend washing tiger prawns wherever you are. Some of them come from polluted waters, some come from places where they're an invasive species, either way they're no longer the rare prized delicacy they once were.

+MunDesigns Los Angeles many asian societies clean meat with such things.... in india and pakistan we clean meat with spoon of turmeric and wash it.... turmeric is anti bacterial and anti fungal...
