I can eat it everyday, I make it in a 3 step, flour egg, breadcrumbs. I'm going to try it your way, then it won't take so long! 😋

Certainly prefer the Eggplant variety over normal Lasagna. Personal preference of course

My family has always fried the eggplant like this, with flour, no bread crumbs. I’ve never seen anyone else do it this way though. I almost jumped out of my chair when I saw you go from the flour to the oil! I said to myself, “is he gonna use just flour? YEAH HE IS, I love this guy!” 😂 This is my all time favorite dish since I was a kid. Thank you!

Eggplant Parmigiana has been my favorite dish since I was a small boy. I do prefer it with the skin on, but I liked my slices a bit thinner. Great dish! TFS!!!

I remember Nonna Denicola serving it and me being so happy and how delicious it was and still today Eggplants became a favorite vegetable cooked ANY WAY I buy Eggplants every week BTW your friends Recipe of Eggplants cut in strips simmered in tomato sauce is a new obsession favorite made almost weekly It is HEAVELY! Tell.your lovely friend thank you so much.i don't use crushed chili flakes I use a whole dried one cracked open seeds n ribs inside removed w it's heat n use ONLY the dried skin for flavor no heat a inch or so with my sofrito for 8 cups of tomato Adds a flavor no one notices It like Oh spicey hot pepper no just the sauce is delicious the skin adds flavor that makes the sauce better in a gentle way I last ate your friends recipe with Papadella silky ribbons with silky delicious eggplant was SO GOOD I had to take photos n the left overs were delicious just eaten out of container from fridge Eggplant Parm is a favorite too n next up.i found a hard to find lately monster huge round white n purple Sicilian as it's called here eggplant in my Italian grocery market here in Brooklyn NYC They don't have alot of seeds and I think there sweeter n just better Sorry I speak to much I just love eggplant and you make it so GOOD I make eggplant stuffed Sweet peppers some times not alot with sauces n only.a little cheese for flavor And u really taste Roasted peppers and Roasted Eggplants n roast garlic a Italian woman from I forget what part of Italy taught me I Never had it b4 but after all the time I'd make it in smaller peppers cut on half So delicious with percorino browned on top That's why I love Italian food it's different when it's from a different regions. I dont know why people are complaining about the wife. I think she is adorable trying to help and sharing your passion for food. I literally laughed out loud when she explained to you what "cutting the cheese" means in America. 🔪 🧀 🤣 My wife is the same way. God bless you both, stay healthy, and keep the great vids coming! Oh, and I'm going to give your eggplant recipe a try. I LOVE eggplant parm but only make it once a year for Christmas because my recipe and prep is a bit different than yours and takes a lot longer. I'm curious to try yours. I'll let you know how it comes out!

We grew some great eggplant and they are still producing.. I've dehydrated a lot of them and fried quite a bit. I'm going to do this recipe next weekend!

Hi there🖐 I'm making eggplant lasagna right now. Just substituting the pasta for eggplant. Did salt and airfried them. Was thinking about dehydration. I think that would be a good option. Probably have to cut them them quite thick I would imagine 🤔 Any info would be really appreciated 👌

I do it a bit different, after flour i dip in egg, then fry, but the rest is basically the same, also one of my favourite food . Good evening from South Australia.

Sorry but the background music has got to go. You wife in the background was trying to help but due to her being so close to the mic she was way to loud and you were too low. So to hear you I had to turn the volume up and then when your wife speaks I went deaf. Sorry but I had to say something to help. Besides the EGGPLANT PARMIGIANA was already being made for dinner tonight. Instead of the Provolone try Ricotta and the mozzarella just like lasagna. Love the receipt.

Boun pomeriggio Sig. Vincenzo, come va oggi? I am your biggest fan and look forward to your next cooking video. All the dishes, desserts and videos on how to make limoncello are soooo much fun to watch. My husband and I were channel surfing videos on KZbin and came across one of your videos on how to make “spaghetti carbonara” when you were cooking for the director of a hotel.....from that moment I had to subscribe to your channel. So what prompted me to comment this dish you cooked “eggplant parmigiana” was like “ hmmmmm I can cook that too”. I followed your directions step by step and “wow” the dish came out like yours and my husband loved it, it was fun to make and very easy.......I wanted to say “”quel piatto era delizioso”. Wow the people on here slamming, who I assume is your wife, talking off camera. She's not annoying, I find her tips good to learn as well. The audio is unbalanced but no one had to be mean and rude about it. I wanted to see if this was different how I made it. Only difference was I use flour (seasoned), egg and bread crumbs. Also, my kids don't like mozzarella so I use any other type of cheese. It's still good. I'm glad I wasn't too far off from a traditional recipe.

Because on the internet big mouths love the chance to sound off about ANYTHING Things they know nothing about or could guess like Vincenzo mentioned QUARANTINE so one intelligent being could easily assume the woman was a family member and since not the voice of a child 99.9 % Vincenzos wife But they'd be rude anyway Safe behind there keyboard and a good chance that they don't know how to cook this dish So maybe why they clicked on Or anything because there MOMMY cooks for them maybe they love it and curious to see how Vincenzo makes it Whatever one wonders Why are they here? For what? Eggplant?

I'm mexican and My grandma is from Uruguay (she grew up eating italian food), she asked me to make her eggplant... She was not happy with what i Made... Now that i see this, Even I am offended with what I gave her.

Sup vince, amazing, my friend i have to breadcumb my eggplant, i was young and had floured eggplant that was just canned tomatoes not cooked into sauce, no salt or anything and baked, i was 7 and was so gross i ran from thier home, parents had to find me, was traumatized and wouldn't go near those people's house again, i still know where it is 44 years later. I wouldn't even eat eggplant til i was 25ish, im very serious, have nightmares lol, even grandkids know the story. Funny now but ill have nightmares tonight thinking about it. Sad cuz eggplant my favorite vegetable. So i bread it in breadcrumbs 🙏, but i sold hundreds of pans, oh boy.. tyvm tc 🍝 PS, i cant even put eggplant in flour, egg breadcrumbs, i go eggplant to eggs then breadcrumbs. Its that bad.

La mangerei volentieri (basta vederla) ma in questo caso la mia è un po' diversa (credo dovuta alle origini "centro-nordiche" di mia madre), cmq sono piccole cose, come ad es lo spessore delle melanzane (fritte in EVO però) e anche lo strato finale che "chiudo" col parmigiano e dei fiocchi di burro (così si brusca il tutto e viene croccante), e altre cosette che è inutile scrivere. Detto questo, lo ribadisco, la divorerei senza dubbio (cmq ti sei scordato di dire che il giorno dopo, lasciata a temperatura ambiente, è ancora più buona). I would gladly eat it but, in this case, I make my Lasagna in a different way (mom recipe's 🙂), anyway are small differences, for example the thickness of the eggplant and also the final step (I ending with parmigiano and butter flakes to have crunchiness). You forgot to say that (left at room temperature) it's even better the day after. 😉
