Sarah, I tried to make burger rolls using the recipe you posted from a live stream a few weeks ago. They were a marvelous success. My mom used to make fermented crockpot pickles using grape leaves to line the bottom and all around the big crockpot that she had, my dad and I always snuck by and dove our fingers in the crockpot to grab a pickle when mom wasn't looking!! They were so good! Thanks for posting this.

Yum! I love homemade pickles! I finally found a lady near here who still makes grape leaf pickles like my Grandma Ginny used to make. Just picked up 3 quarts this morning! I think you would love those, too! Especially if you have grape vines and have plenty of grape leaves (I can’t remember if you do). They are a fermented pickle, too!

@@ozarkfamilyhomestead Just went out and snagged what cukes I could find. I was going to ask if you guys ever planted dry beans to grow for more dry beans? I just experimented with that this year, and I find it is a lot of work. I planted a 20' row on a fence-some pinto and some navy. So far, I got a pint jar full. I'm guessing another cup or so on the bean vines yet.

@@KateBurt-b4e Yes, we've grown dried beans in the past, but we didn't do it this year. We tried succotash beans and they did well for us, but we would have to grow significantly more plants to actually have enough to feed our family! :)

@@ozarkfamilyhomestead they are already bubbling. My house smells like garlic. lol mine looks a lot like yours did. Canned 12 pints, two half pints, and one 10 oz. Jar of plum jam yesterday too. Wish I could find more apricots. My first batch is already down to three jars. My family loves the homemade jams. I have a jelly making cone, but we like jam the best. I use only about half of the sugar. I use my Le Creuset Dutch oven to cook it in. It keeps the heat in and constant. It cooks in half the time.

I love fermenting! I started with kombucha, turned to water kefir and started with kimchi about a year ago. The best thing with fermenting vegetables is, you can change the recipe however you want to (just need enough salt). I make kimchi from pears and add carrots and whatever vegetable looks good and is affordable. And there are actually different kinds of chili flakes, even pretty mild ones. And because I love kimchi that much, I would probably turn the cucumbers into kimchi 😅. Using pears definitely adds some sweetness to it. Maybe your family would like that better.

Oooh, I've not heard of kimchi using pears! The one I showed in the video did use cucumbers and we like the taste of it. It's just a bit too spicy for us! :)

Janice do you buy your mustard seed from Azure Standard? I can 40-50 jars of bread and butter pickles from my cucumbers. Buying those little tiny jars of mustard seeds is hard on my budget for I use 5-6 of jars. Cost is around 30$ for all the mustard seeds. Your fresh pickles look delicious!!!!!! Thank you!!!

I have never made sweet pickles, Krista! I think these fermented cucumbers most closely resemble the refrigerated Claussen pickles in the grocery store. Several people have been surprised that I don't use vinegar, but it's not necessary for this recipe. :)

Oh, bunches of vegetables, Judy! Fermentation and dehydrating used to be very common ways to preserve foods, but I think they've fallen out of favor with canning and freeze drying taking over. Beets, carrots, cabbage, green beans, and a whole bunch of other vegetables can be fermented. :)

I've heard that too, but never tried it myself, Tiffany! I have tried putting my cucumbers into ice water for a few minutes before slicing them. I do think that helps in making them crisper. :)
