I just love cooking old-fashioned food from scratch! Tonight, I'm preparing a hearty meal with basic ingredients for for my family's supper - a classic meatloaf, mashed potatoes, green beans, and broccoli salad. It's going to be delicious and I want to share the experience with you! Broccoli Salad (I made a double-batch in the video.)
2 heads fresh broccoli cut into bite-size pieces
1/2 red onion, chopped
1/2 pound bacon, chopped
3/4 cup raisins, softened with hot water then drained
3/4 cup chopped walnuts or sliced almonds
1 cup mayonnaise - homemade recipe here: • Company's Coming! A Bu...
2 Tbsp red wine vinegar
Mix all the above together, chill, and serve!
Momma's Meatloaf
Preheat oven to 350 degrees.
Mix together: (seasonings can be "tweaked" to your liking)
2 pounds LEAN ground beef or venison
2 eggs
3/4 cup of rolled oats or cooked rice
1/8 cup minced onion
3 Tbsp. liquid aminos
1 tsp. garlic powder
1 tsp. sea salt
1/2 tsp. pepper
Using your hands, mix everything together in a round, glass dish. Form into a circle with a hole in the middle. Pour an 8 oz. can of tomato sauce over the loaf and spread out evenly. Sprinkle with salt, pepper, and basil. Bake for about 45 minutes or until cooked through.

LOL - mashed potatoes and green beans go together. When I worked for a family restaurant (it was a chain), we shortened that to "homestyle" when we called in our orders. "chicken homestyle" meant regular serving of chicken, mashed potatoes and green beans on the side. I don't remember us having meatloaf, though. But mashed potatoes and green beans were ordered often enough together that it warranted its own word.

A lid from a parmesan cheese can works well on a mason jar and gives you the holes to shake out the ingredients. I have one of those on my salt jar so that I can just shake the salt out.

Hi Janice. If you put the almonds in a fry an on a lower heat and toss them so they don’t burn, this gives them a nicer nutty flavour. You could even put them in the oven. I do this with pecans and walnuts too when I’m making salads.

Onion chopping tip, place a wet towel (paper or cloth] next to where your chopping and no more tears!

Oh the meatloaf looks delicious and so does the broccoli salad.I always cook without measuring anything. Except when it comes to baking cookies or cakes then I will measure.😘

I cook my meatloaf on a roaster pan. The grease drips through the holes to the bottom of the pan. The meatloaf is delicious and not at all greasy.

Add Mayo to potatoes, when you mash them, they are delicious.

My mother taught me that trick, as well. She used about 2/3 butter and 1/3 mayo. Not cup, just however much she needed was that the ratio. The actual amount depended on how much mashed potatoes she was making. And of course she never used a measuring spoon or a measuring cup unless she was baking so that’s how I ended up cooking, as well. The good old eyeball-it method. You just go more on texture and consistency and little taste tests along the way.

Im subscribed, and watch when I can. Im always behind on videos. I don’t think I’ll ever get caught up (and that’s a good thing)! I am sorry that I can’t keep up with everything. However, I so enjoy dropping in and trying to “visit” when I can. It makes me feel like I’m part of a family- kinda how I grew up so long ago. Thank you for sharing your life. You have a beautiful family and I love all of the journeys, care packages of love, watching chores and animals, cooking and baking- just everything! What a delight! I always enjoyed going to papaw and mama's for summer vacation we lived about 7 1/2 hours away but every summer two out of the four children would take turns staying the whole summer with them.some of the best memories of my life.😘😘😘

Shaky video, laundry, and everything else about your REAL videos are why we all love your family. You are showing us that there are people like us! I totally get what you mean when you talk about how much you miss the presence of your children when they are gone. We have 2 married and moved out and another with a full time job. That leaves us with just 3 children (teens) at home most of the time. It is SO odd to go somewhere and only have 3 children with us. We definitely notice the absence of the others.

@ozarkfamilyhomestead we say God knew what He was doing by spacing our children out so far (28-13) because I would be a horrible empty nester. Grandbaby #4 is due in March. We had hoped for grandbabies before all the children moved out. He answered that prayer!

I can remember my mom putting the salt in a clear canning jar and also or sugar. She forgot to put a label on the jars and got the salt mixed up with the sugar one day.

I never made meatloaf with rice in it. My mom used oatmeal in hers. I make mine this also. I have to give it a try with rice.

I typically use oats too, but I wanted to use up that leftover rice in the fridge, so that's why I tossed it in the meatloaf. It actually worked well! :)

I just want to thank everyone for their prayers this past week as I have struggled. I took a fall out of my wheelchair a week ago and I've had the ambulance here 5 times but today is a better day. My housekeeper arrived and cleaned my house. Smells so good..lol. pretty sure I'm on the mend. So thanks bunches fo.

It's interesting how many different ways people make their meatloaf. I've tasted many over the years and found that I love mine and don't eat others....lol. My meatloaf is served with baked potatoes and peas.
