Hi, this is Jia.
I would like to share my favorite Korean recipes with you.
I've been running Korean cooking class and food tour company in Seoul, Korea for the last 10 years.
I wanted to share my secret recipes which are both easy to make and delicious.
I hope you enjoy my video!

Ingredients
egg 2
spring onion 1 stalk(for garnish)
baking powder 1/4 tsp
Broth
leek 1/3 stalk
dried shiitake mushroom 1
fish sauce 1/3 tsp
garlic 1 clove
kelp (dried) 5cm X 5cm
white radish 50g
Instructions
1. Add 1 and half cup of cold water to the pot and add all ingredients such as dried kelp, radish, garlic and shiitake mushroom
2. Bring to a boil, reduce the heat and keep simmering until the radish is fully cooked. Strain the broth and cool it down
3. Add baking powder to the broth
4. Break eggs, add 6 tablespoons of broth(with baking powder in it) and stir
5. Chop spring onion
6. Pour egg mixture to the pot. Start stirring with spoon until it thickens
7. Stop stirring when the liquid is almost gone and looks quite thick
8. Reduce the heat to minimum. Sprinkle chopped spring onions and quickly cover the lid on. Keep simmering for 2 minutes
9. Turn off the heat and leave the lid on for another 3 minutes

Can you use the black pot on a stove with the coils instead of flame?

I think so. It can't be used on an electric cooktop though.

What can we do with the leftover radish and leek, seems like a waste if to make the stock only need 7 minutes boiling time

Chindy Lie Hi Cindy! You may freeze leek for later. Another option is to chop leek and make leek oil for stir fries. Radish has a nice crunchy texture. You may dice and add to salad:)

I just wanted to know if you used all the broth or just the 6 tablespoons. It didn't seem that you used all of the broth so I would assume you can store the broth to make more at a different time.

I used only 6 tablespoons of broth. If you add more liquid, the egg mixture it going to end up very soft and runnier. It might take more time as well. So I think for 2 eggs, five to six tablespoons of broth is good enough,

@@JiaChoiChef Thank you. And do you have a video on how to do a seafood jajangmyeon. There use to be a restaurant that made the dish but has since changed hands and I can't find that exact dish again. I fell in love with jajangmyeon but I miss the one that had seafood in it as well.

Can I ask why using baking powder? Can I omit this ingredient?

Baking powder makes steamed egg more puffy. But you can omit it. Just wait until egg mixture rises enough.

Baking powder is not a must ingredient. But it helps to make the eggs more fluffy. in case of cooking without baking powder, whisk the eggs enough until foamy
