I’ve always had an issue making hash browns, but this makes sense! It reminds me a little of a potato pancake that I grew up with. I will try this recipe this weekend and I bet I am the hero....

Great video! I've never seen a flat grater like that! I liked that you soaked the potato, rinsed it, then squeezed out most but not all the water--I've heard those are critical steps. I never would have thought that cornstarch would be in this recipe, but I can see why it works. You did an excellent job of switching between far-away and close-up shots. I especially liked the close-up shots of the hashbrown cake once it once done. When you tapped it with your knife, there was no doubt that it was crispy. Once again, great hash browns recipe. Like you said, perfect with an English breakfast--perhaps that's the next video? I can't wait to see more--subbed!

Thanks Parnell! That grater came somewhere from the depths of my kitchen cupboard. I tested this recipe in different variations and the combination of corn starch and egg gave the best result for a thick hash brown, the texture on the inside was well cooked and soft but not stodgy. It's the right one for an English breakfast. There will certainly be more videos for the full English, thanks for your comment

I made hash browns this morning following a recipe I had. I wasn’t that impressed as the onion was not cooked sufficiently and they were very wet. There are so many different recipes for hash browns, but yours seems to make more sense (the British way) so will try your method next time. Thanks.

I love Ukrainian Derun, I do not press water (we have little water in potatoes), I do not wash! Not fry! I do not add eggs in flour and starch! Just grated potatoes, salt and fry - it is very cool! And then with sour cream!

Again, something new mate. I have made thousands of camp hash browns on the cast iron pan up bush, never this way. I always grate 4 large spuds into a bowl then into a tea towel and strangle the heck out of em until most of the water has gone then into a very hot cast iron pan over the coals with a table spoon of olive oil in it and press the hash down until flat, never used an egg just salt and pepper, leave it for ten mins either side and that gives me a nice crispy hash brown. Yours however looked like top cafe quality, ill give this a go for sure. Shit mucker, making me hungry.

To me, hash browns are how I use up leftover boiled (or baked) potatoes. Simply grate them, fry on a griddle or in a cast iron pan with a minimum of fat (bacon grease is perfect for this) and season them with salt and pepper. Boiled russets will stick together, so no egg is needed.

just add an egg yolk. it does help with sticking it together..... but if its not for the sticking aspect of it... add it for depth of flavour. egg yolk gives it a lovely richness.

Hash browns don't contain eggs or corn starch, just shredded potatoes. What you made is a potato pancake or latke. Similar but not the same.
