Back when I was a line cook we would shred the spuds, rinse the starch out, then place the spuds on a sheet pan 1/2" thick, score in portions and freeze. The freezing makes them crispy and the center will be white. Try it some time.

@@mikewatson5281 No Mike not really. I would pull one sheet pan from the freezer at a time. They break on the score lines when hard frozen, but thaw with a little time. Either way they are fluffy white inside and golden crispy on the outside. Enjoy!

I don't know if this is any better or easier, but I'll sometimes use the old sushi trick of washing the grated potato before drying them. Put them in a bowl with cold water and fill and drain/rinse a few times to get all of the starch off. I've also grated part of an onion and then mixed it in after the potato is de-watered. Sometimes, if you cover it while it's cooking, the steam will make sure that the hash browns are cooked closer to when they're browned. I learned that by watching an old line chef at a place I used to eat at.

Grate your potatoes then rinse them with fresh water. Grate an onion and mix with the rinsed shredded potatoes. Dewater the mixture of rinsed potatoes and onions, a cheese cloth is best. Twist the cheese cloth at the base to maximize liquid removal. Then fry the dewatered mixture of potatoes and onions in an oil that you like the flavor of. Potatoes being mild will pick up the flavors of the oil. Bacon grease, rosemary oil, thyme oil or others as you choose.

@@ram1brn I should have prefaced it with based on Russet potatoes, which are very starchy and tend to be sticky and gooey if the excess starch isn’t rinsed off. If you are using another type of potato that is less starchy it wouldn’t be as necessary also depending how light and fluffy compared to sticky and gooey you like the insides of your hash-browns.

I love hash browns like at burger king and other fast food joint, i even went to this hotel went for lunch without my family cause i was hungry but a hash with some orange juice, bacon, an egg and a burger and i loved the hash, i added it the bacon and the egg to the burger it was so good like when i bit into it, it was leaking egg yolk (that is how i like my fried egg) well rounded egg, the yolk isnt showing untill you tear into it perfection and i know since its homemade its gotta be good aswell as your making it so i know it will be delicious cant wait to try it

Based on my own personal mishap and hundreds of dollars spent for my portion of the emergency room bill, when peeling the potatoes, either: (1) use the safety glove shown in the video, or (2) stick a fork into the end of the potato and use it as a handle to help prevent the potato peeler from gliding over the end of a finger that's holding the slippery spud. A few years ago, while peeling some russet potatoes, I was using an extremely sharp, serrated potato peeler (which I've since swapped for a cheap $0.99 peeler) and sliced the tip of my left index finger. We were unable to stop the bleeding, despite applying heavy pressure and holding my hand over my head. So, I ended up in the emergency room getting some shots in my finger to numb it (which wasn't entirely successful) before getting three stitches. Hopefully, this suggestion will save someone else from a similar fate.
