This Olive Garden copycat recipe will knock your socks off! You will not be able to tell that it's vegan. If you love Olive Garden's Zuppa Toscana but are vegan or milk-allergic, this recipe is for YOU! It's the perfect comfort food on a cold winter day or a great addition to your Meatless Monday meal rotation or Veganuary! This soup is great to cook up on a Sunday can be meal prepped for lunches for the week. Give it a try!
To make the soup, you'll need:
4 cups cut up potatoes
1 medium onion, chopped
4 cloves garlic, minced
1 package plant-based bacon
4 links plant-based Italian Sausage (I like Field Roast brand in this recipe)
2 Tbsp oregano
pepper to taste
red pepper flakes to taste
8 cups water
1 1/2 Tbsp salt (or to taste)
1/2 bag chopped kale
1 cup plant-based heavy cream (I like Silk brand) or coconut cream
