This is the blueberriest blueberry muffin recipe ever! These muffins are soft and moist and just bursting with blueberry flavor. The secret is creating a quick and easy blueberry jam that you'll swirl through the batter that gives these muffins that extra punch of flavor.
There's no egg or dairy in these muffins so they make the perfect treat for vegans or those with food allergies. (The recipe can also be made with egg, milk, and butter for those who prefer). I use flax egg in place of the egg. The flax eggs are easy to make: boil 1/2 cup of flax seeds in four cups of water for 20 minutes. Cool. Three tablespoons of flax gel equals one egg.

I usually freeze it right away because I won't use it all. It thaws quickly in the microwave or on the counter. It can be frozen for at least six months, I would think.
