This is good for boiled dumplings. For steamed dumplings, use hot water and use a bit more water (around 65% of the flour, so ~195g of hot water for 300g of flour)

This is so much easier! I usually roll the dough paper-thin onto the table and then use a large cookie cutter or medium sized container lit to press and cut into it. Maybe I don't actually need to make my dumpling wrappers as thin.

Wow, I like your technique a lot! I was wondering if this dough is good for boiling and frying too? And if I make too many and put them in the freezer they will still be good?

Normally I boil the dumplings. But it is also very yummy to fry dumplings in a frying pan, which is done not only with oil, but also with some water. I will think about to make such a video. For too many dumpling wrappers, if put them into a freezer, they would be dryer and not easy to wrap the fillings for the next time. So I suggest not to make too many every time and better use them up. 🙂

Yes. I am used to put a little salt to help produce more and stronger gluten. Without salt, it is also fine when you knead a little more and let the dough rest.

Yes, if you really have made too many. Put some flour on the wrappers evenly and into a food preservation bag and in fridge. However, I suggest to use fresh wrappers every time, because it is not difficult and taste better.
Can I use normal flour instead of all purpose flour?

Yes, I think they have no difference.

"normal" flour IS all purpose flour. "Prepared" flour already have salt and I think yeast. All purpose is all purpose because it's just flour. You can make whatever as you just need to add ingredients according to what you are making. Can't take the salt out of "prepared" flour! :)
