I used to make pies all the time, but after developing quite a few food allergies, it seemed more trouble than it was worth. I recently found an allergy safe (for me) pie crust mix and needed a quick refresher about the sugar and starch ratios. I just wanted to say thanks for sharing a truly classic style of fruit pie. This is almost identical to the ones my grandma had written out from the older ladies in her life, which probably meant it at least went back into the late 1800s. I'm excited to go see how my Frankenstein pie turns out! 😄

I am throwing in a pack of blueberries to 3 packs of raspberries. ( 6oz.)..I buy a pre-made pie crust.baste with butter brown in oven then fill.mmmm

does the fruit break down as it cooks or does it keep it's shape? sorry for the dumb question. just wondering why corn starch is added. i only have frozen raspberries, and dont want a soupy pie.

The fruit breaks down. The cornstarch is added as a thickener. The pie needs to cook long enough for the sugars from the fruit and the cornstarch to combine well. It is important to let the pie sit and cool as well so as to allow it to thicken. Frozen berries tend to have more juice so generally a little more cornstarch is needed. I hope this helps.

You can use butter, just make sure to refrigerate the dough for about an hour before rolling it out. I hope that helps.

You can use frozen berries in the recipe too. It will work with fresh or frozen berries.

Raspberries are really tart so the cream will help balance out the tartness
