Italy's flour typically has less gluten if it's the "00" or "0" flour. It's basically ground down more therefore breaking up the protein/gluten. "00" is the finest ground flour and it's really popular.

My aunt is a food scientist and I heard her say once that the flour in Europe is different because in Asia and in America, they add extra gluten to the flour to make breads that are more elastic.

*pls ignore Recipe for one: - 1/2 onion (diced) 1 small potato (cubed) pinkies-length zucchini cabbage (similar pile to potato) meat of some sort (or firm tofu) -> fry, onions and potatoes first, then meat, then remaining vegetables 2 tbsp oil 2 tbsp chunjang -> fry on low heat for 2 minutes add vegetables and fry for 2 minutes add 1/2 cup of water (or more if needed) + 1 tbsp sugar 1 tbsp oyster sauce -> boil on medium high until potatoes are soft when finished, 1.5 tbsp water and 1.5 tbsp corn starch (mix then turn off heat) - serve with rice, a fried egg and kimchi

Italian flour is different to US (and possibly Asian) flour. It's from red or "hard" wheat. Different texture, less gluten than US wheat, more easily digested. "Daniel's your uncle." No, but he is The Daddy!

There are several varieties of wheat in the US, including hard wheat - but you have to check smaller companies such as Bob's Red MIll and King Arthur (I am biased).

As far as I know, Italian pizza dough rests for a long time (more than 24h) so that the yeast has a lot of time to ferment the flour... might also contribute to better digestability :)

How much of the jjajang mixture is in the packet? Enough for one meal or do you need to store it in the fridge? Is there any way of stopping the smell of the kimchi from filling the fridge? I buy it a kilo at a time, and for a month my fridge stinks!!! LOL I love kimchi but not the smell of it everytime I open the fridge door. :'(

Hi Do Lally! The packet will have enough for 7-8 servings. As for the Kimchi, I would suggest one of those airtight containers with the rubber linings. Seal in all of those aromatics :)

A small open bowl with about 1/4 cup of white distilled vinegar will get rid a lot of the smell. After a bit your fridge will not smell like vinegar either. Remember to refill the bowl
