I’ve seen a few kept bagel recipes, and I’ve been dying to try them for a while now. They tend to use a variation of the traditional fat-head dough. This particular recipe is from PeaceLoveAndLowCarb.com. Firstly, let me say they were SO delicious! My hubby even loved them, and he isn’t following a low-carb diet.
You can slice them, toast them and spread with cream cheese, or use them to make breakfast sandwiches like we did. You can even omit all the seasonings and use cinnamon and sweetener instead to make a sweet version - maybe even topped with a low-carb cream cheese frosting. The possibilities are endless. They really make great sandwiches! If you make the holes too small, they may close up during baking - but really, who cares, they will still be delicious.
I recommend storing in the fridge for up to a week, or you can slice them in half and freeze them, then pop them in the toaster after thawing briefly.
NOTE: If you don’t use a microwave, you can just heat the cheese mixture on the stovetop until melted and gooey before continuing with the recipe steps below.
INSTRUCTIONS:
• 2 cups almond flour
• 1 tablespoon baking powder
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon dried Italian seasoning
• 3 large eggs, divided
• 3 cups shredded low moisture mozzarella cheese
• 5 tablespoons cream cheese
• 3 tablespoons Everything Bagel Seasoning (Recipe below) - I just made a mix of toasted sesame seeds, garlic granules and coarse sea salt.
INSTRUCTIONS:
1) Preheat oven to 425°F / 218°C. Line a rimmed baking sheet with parchment paper or a Silpat.
2) In a medium mixing bowl, combine the almond flour, baking powder, garlic powder, onion powder, and dried Italian seasoning. Mix until well combined. I like to put the mixture through a flour sifter to ensure that all the baking powder gets mixed in with the rest of the ingredients.
3) Crack one egg into a small bowl and fork whisk. This will be the egg wash for the top of the bagels. The other two eggs will go in the dough.
4) In a large microwave safe mixing bowl, combine the mozzarella cheese and cream cheese. Microwave for 1 minute and 30 seconds. Remove from microwave and stir to combine. Return to microwave for 1 additional minute. Mix until well combined.
5) To the mixing bowl, add the remaining 2 eggs and the almond flour mixture. Mix until all ingredients are well incorporated. If the dough gets too stringy and unworkable, simply put it back in the microwave for 30 seconds to soften and continue mixing.
6) Divide the dough into 6 equal portions. Roll each portion into a ball.
7) Gently press your finger into the center of each dough ball to form a ring. Stretch the ring to make a hole in the center and form into a bagel shape. (Make the holes a bit larger than you want as they will close up some.)
8) Brush the top of each bagel with the egg wash.
9) Top each bagel with Everything Bagel Seasoning.
10) Bake on the middle rack for 12-14 minutes or until golden brown.

PER SERVING - Calories: 449 | Fat: 35.5g | Protein: 27.8g | Total Carbs: 10g | Fiber: 4g | Net Carbs: 6g
EVERYTHING BAGEL SEASONING:
If you can’t find Trader Joe’s Everything but the Bagel Seasoning, you can make your own:
1/4 cup toasted sesame seeds
3 Tbsp plus 1 tsp poppy seeds
3 Tbsp plus 1 tsp dried minced onion
3 Tbsp plus 1 tsp dried garlic flakes
2 Tbsp coarse sea salt
Mix all ingredients together and store in an airtight container or spice jar. Shake before using.

I made this recipe instate of almond flour I use coconut flour (60 gem) and add 2 gram Butter everything else same Test lot better and lot cheaper compare to Almond flour

@@Justmeandmythoughts55 I just made them. They are very good. Not quite the taste of a traditional wheat bagel but very flavourful. Definitely has a bit of a cheesy taste but it is muted.

This look amazing. Fathead dough surprises me daily these days. But, to make things easier Trader Joe’s has in their seasonings area a jar of “everything bagel”. I have it and it’s wonderful. Thank you for the great video. God bless 👍🙏❤️🇺🇸

These are delicious. I make them the exact same way except I add close to 2 Tbsp of nutritional yeast for the B vitamins. Delish!

These look amazing! I have a donut tin, Will try them in there to make my bagels 🥯! Breakfast sandwiches for those mornings 🌄 😋 I'm on the go! Thank you so much for sharing. Update: May 2021 donut tin was a slight success. The bagels ended up rising into a muffin top. No matter, if you reverse then, poke a hole through the center ta-da, you have mini bagels or as I heard, Magels!

These are great!!! The topping makes me feel like I am eating a bagel. It lacks the chewiness you get from a bagel but it still really works as a good substitute. I can't wait to put some Lox and cream cheese on this.

You can replace all the seasonings and use the sweetener of your choice. Then once they are done you could top them with blueberries and cream cheese. Yum!

Initially I was not sure cheddar has the same melting properties and would work. But IU just read something that suggested it will work fine if you don't have any Mozzarella :)

hello! just wondering about 2 things. around how many grams is a cup of shredded mozarella? I have a log of mozzarella. hehe. 2nd, if we dont have a microwave, how best to melt? double boiler? thank you.

Lisa Bailey, I'm sure you could skip the onion and garlic powder and and make a sweet version by adding a few drops of liquid sucralose, or whatever sugar free syrup you like. On another channel someone suggested making waffles with the fathead dough. It seems like there are endless possibilities with this dough.
