Thanks soo much... @@lowcarbrecipeideas is there a reason why you don't use egg yolks in keto bread recipes?
@lowcarbrecipeideas7 ай бұрын
@meincraft6015 Yes. The protein from egg whites helps to boost the rise of the bread. It also makes the bread taste less eggy and color is whiter. On the other hand, the fats from egg yolks hinder the rise. Check out this tutorial video on egg whites vs. whole eggs, kzbin.info/www/bejne/gneofWuwhbF1mMk kzbin.info/www/bejne/gneofWuwhbF1mMk

@lowcarbrecipeideas2 жыл бұрын
Hi Andy, yes you can. Here's the ratio which you can record it and use it for any other keto bread recipes; Egg white powder 6.25 g x 8 large egg whites Total = 50 g egg white powder Room temperature water to reconstitute the egg white powder; 35 ml x 8 large egg whites Total = 280 ml water You can either whisk both together then add into the wet ingredients OR add the egg white powder into the dry ingredients and water into the wet ingredients. Thanks so much for your feedback and support! It's actually normal for keto bread to feel a little moist and sticky. This is due to the gumminess from the psyllium husks, so that's why they are better served toasted. You can try resting the bread in the oven after baking to dry the crumb further. Remove bread from pan, let it sit on a sheet pan, and rest in the oven for about 30 min to an hour with the heat turned off.

Have a question..why do you use baking soda in addition to the yeast? Doesn't the yeast alone work as the rising agent? Thanks!
@lowcarbrecipeideas2 жыл бұрын
I think you mean baking powder right? Coz no baking soda is used in my bread recipes. Keto Bread tends to be heavier, denser and wetter due to the ingredients hence, they don't rise as well even with yeast. Hence, we still need to boost the rise with baking powder and egg whites even when yeasts are used. If you follow my tutorial videos, I have actually covered this point. Of course, if you use vital wheat gluten, it will rise very well but all my recipes are gluten free.

Success!!! Adjustments: 6 egg whites + 2 whole eggs (315 g total), inulin added to both yeast and dry mixture (30 g total, I have never tried proofing without some, but heard it's no worse), only 160 g of flaxseed flour since it's more absorbent than ground flaxseed and I still had to add more water (+ more than 100 ml, less than 200 ml, don't know exactly), proofed in oven 90°C unintentionally longer (the loaf got maybe 1.7x - 2x higher pre-baking, 10x4 pan so it was spread thinner). Reading this, it's a miracle, that it worked 😆

Did you use whole psyllium husks or preground psyllium powder?

@@palo1722 how much psyllium powder did you use?
@palo17222 жыл бұрын
@@lowcarbrecipeideas I used 27 grams as the recipe mentioned, but I learned from your psyllium husk video that the powder is concerned and will make the bread dense. Therefore I purchased the whole husks and ground it myself and remake the recipe. I will update the post and let you know if I was successful. Thanks

@@palo1722 OH that wd be too much for psyllium powder so it will affect the rise and density of the bread. Glad that you are going to use the self ground whole psyllium husk which is better for baking. Almost all keto bread issues are caused by too.much psyllium husk so I am glad you're going to re-try it. Do let me know how it turns out 🙏

Not sure what I am doing wrong but this is the second time I have made this recipe and it turns into a brick everytime. Everyone else's looks amazing. Tried a different yeast this time, proofed it and still a brick. I am confused a bit about the psyllium husks...first you say if it is powder it is too strong and you need less butter you say if you are using husks then grind them up finer to me those are contradictory ideas so maybe that is where I am going wrong 😀
@lowcarbrecipeideas2 жыл бұрын
Oh that should not happen. Almost all keto bread problems are related to the psyllium husks so please check out these tutorial videos for better understanding and success; kzbin.info/www/bejne/lZPRdKqrmcx5qpY kzbin.info/www/bejne/sGOUlXWkq6-WeLM

I asked and the water that yeast should be dissolved in is about 37 c
@lowcarbrecipeideas2 жыл бұрын
Don't worry these temperatures will not kill the yeasts. On the contrary it is very conducive to wake the yeast up from its dormant state to get to work. I have done lots of research on it and experimented on countless loaves and it works. Otherwise, I would not recommend it.
@timothy7901102 жыл бұрын
@@lowcarbrecipeideas you might have, but ive asked the manufacturer here in sweden directly (kronjäst) and the lady wrote "your water is too hot, shout be no more than 37c" so I think ill go with that. You might have a different strain over there, that tolerates heat better?

Sorry I messed up 😭😭 27g is the weight of whole psyllium husk or weight of whole psyllium husk after grinding
@lowcarbrecipeideas2 жыл бұрын
As mentioned, weigh after grinding. It's important to grind until half its original volume (50%), not more or less. This is the most effective for absorbing the water

Good evening, If I do not have Physillum husk, what can I use as a replacement? Thank you and looking forward
@lowcarbrecipeideas2 жыл бұрын
Sorry you can't replace the ingredients as it won't work. Keto Bread is complicated and require lots of experimentation before we can get it right. The most Important ingredient is psyllium husk as it is the best natural replacement for gluten. Even if you're using psyllium husks, you need to use it correctly otherwise the bread will fail. That's why I have tutorial videos on psyllium husk and powder.

Which apple cider vinegar you used? Bragg organic apple cider vinegar with " the mother" is the best. Some people have been using this brand without problem but after switching brand then they experienced the reaction. When they switched back to Bragg no problem. I have personally used another brand when Bragg was out of stock but I usually buy the organic ones with "the mother" and did not face any problem.
