Love love love the flackers! Such a great way to incorporate flaxseed meal into my daily diet. Baked it for the first time today. Not quite perfect but it will be, I'm sure, with a few more practices. A few learning points to share: (1) weigh the ingredients, including water than go by the cup, for accuracy. (2) add more flaxseed meal if the dough is not coming together or still sticky. Different brands of flaxseed meal have different degree of absorbency. Use your own judgement. I added another 10g of flaxseed meal to the recommended measurment (3) roll it out as thin and as evenly as possible for a faster bake, and crispier texture. (4) bake for a longer time if yours are still soft after the recommended baking time. Again, use your own judgement. I baked mine for another 10mins (5) go big on the seasoning if you want to reduce or cover the taste of flaxseed. I added a tsp each of salt, garlic powder, onion powder, paprika and chives and none of the flavours turned up. 😅 Thankfully I love the flaxseed taste, so it's alright. A really versatile recipe, thanks for your sharing!

Thank you. I am new to gluten-free and most bread recipes call for almond flour but it's so expensive. We pay more than R280 (19 USD) per 1kg in South Africa. Flax seeds are way more affordable and you also don't need to add a whole lot of other ingredients like eggs, xanthan gum and whatever else. Your recipes are simple to follow and I am definitely trying them. Keep up the good work.

Hi Petra I like the way your working with flax seed .. being that is so good for us . I've found that the way to go with these types of breads for the best texture and taste is to make small buns instead of a loaf . I'm experimenting also with using a little Lupin and coconut flour combined with flax to give it a more multi flavour style taste . Keto . 100 gms Lupin flour 30 gms flax flour. 72 gms psyllium husks . 1 tbs nutritional yeast. 1 tsp instant yeast. 1 tsp sea salt . 2 tsp ACV. 3 EGGS ( full eggs or just whites ). 1 & 1/4 cup of hot hot water . Mix all dry ingredients .. Fork beat eggs.... Add dry ingredients to eggs - mix . Then add water . Then mix all ingredients very quickly as it absorbs all the moisture very quickly . I use my hands to mix and make 6 equal buns.. Bake for 175° celsius or 345° fahrenheit for 50 - 60 mins . I make these almost every week .. You could Change around the flours . I was looking for a lower calorie - healthy option . With a reasonable taste. Have a great day .. good luck ..

I have tried both the flax wrap and bread a few times. For me, they are the best quick and simple gluten free alternatives I've found. I customize the flavors from sweet to savory. I made this recipe. I ended up adding a bit more ground flax to help in come together. It was quite cake-y but toasting helped that. But I added 2 tsp caraway seeds and that added a nice flavour.

We just made the flaxseed bread. We followed the recipe exactly as you made it. It turned out looking the same, but we didn’t like this as a bread. It is definitely more ‘cake like’ and it was ok with some butter on it, but we thought it was more sweet than savoury. #edit - the bread tasted much better when toasted... 😀

Tried the bread recipe, and found that after following the directions word for word, the outside crust of the bread was dry which was perfect, but the inside was almost raw/wet after cooking for the 60 mins suggested, then I put it back in the oven for a whole extra 30 mins and I suppose it wasn't raw anymore, but still very moist. I have a feeling I need to use finely ground flax instead of flax seed meal and not grinding it further. Also I used a glass loaf pan which also could've been a factor.

The flax seeds need to be whole and ground fresh, I used it before to make a keto flour and after a few weeks I started getting the fish flavor because the flax in the blend oxidizes. Made my birthday cake very weird in spots.

Thank God I found this video! Made my first (added 1/3 cup Chia seeds, not a good idea) it didn’t rise. Will do a second and add chia seeds to the top 😂 and nor inside. Overall, it tasted good toasted, (I’m Keto for health reasons) so happy I have real bread back in my life. The carbs can be high so I slice very thin pieces. 5:33. If you DO overcook the the tortilla and it gets crispy and brittle....a partial/full fix is to put it back on the griddle for 10-15 seconds as you add a splash of water to the pan and quickly cover with a lid. This will "re-humidify" the tortilla to a workable degree in my experience.

What temperature do you cook the bread at? & what is the temperature of the water as your's seemed to be very hot as the steam was rising from it ?& as another person asked can you toast the flaxseeds prior to milling, but I suspect that may dry out the seeds and would affect the final loaf taste ^ Plus that would be a lot of seeds to toast,

I made this bread yesterday, and added some nutritional yeast and fresh sage into the dough. Turned out good. We live in costa rica and there is no good quality bread here, so this was a great healthy alternative. Thank you so much. Do you think it will be good without soda? Hi! On the blog you have also baking soda and apple vinegar. If I only use baking powder like you did here the measurements are still the same? Just exclude the baking soda and vinegar and I'll be fine?

I followed the recipe and directions exactly (something I rarely do, lol) and the loaf collapsed. It does taste good to me, and I'm going to try it again. I'll cut down on the water and also I'll grind the flax less. Mine was ground almost to the point of flax butter and that may have been the problem,
