for those of us that are lactose intolerant, I've found that kefir labne works well as a replacement for ricotta. Mixing the labne with some sugar helps to blunt the labne's tartness.

I found that Queso Fresco worked much better than ricotta...closer to the "real thing" since the queso fresco doesn't melt or isn't "squishy/wet" like ricotta. Akkawi or Nabulsia cheese (used in Jerusalem from where I first tasted this amazing dessert!) is not readily available in much of the USA and so after using mozzarella first since that is what many recipes call for I went with the queso fresco...I did put a little sugar in the shredded cheese to make it a little tastier. Try this recipe, you won't be sorry!

This is a pretty good recipe! Since I come from Nablus in the West Bank, the place where knafeh was invented, I realize how hard it is to get the sweet cheese (since now I live outside), but I guess ricotta cheese is a great alternative!
@layla53125 жыл бұрын
MyntBubbleGum there is no one place where knafe is from, knafe comes from the middle east and different countries have different types of knafe. The most popular type of knafe comes from Nablus, Palestine
@hermione13824 жыл бұрын
All Kanfeh version come from the heritage of Ottoman empire which ruled the Middle East for many years. It is true the Knafeh with semolina instead of kadaif came from Palestine but the desert itself originated in Turkey.
@rayyanaghaalnimer57424 жыл бұрын
@@hermione1382 the most popular Knafeh recipe is the Nabulsi one. Honestly I cant care where it originates from since many versions are unique to many middle eastern countries. We should all indulge in the taste and forget its origins :)

I'm trying to find a Lebanese desert we used to get from a small bakery in Lawrence, Massachusetts, back in the 1970s. It was like a pita bread slathered with rose water scented honey, topped with sesame seeds and chopped pistachios, then quickly warmed in an oven.
