Love your channel Al. The style of your videos match the quality of the recipes. Spot on. Some of your videos have the ingredients listed in the description and this make for easy copy and paste (rather than constantly pausing the live video to make notes). Hi Al another great vid! Yep Brum is the place for baltis hailing from Birmingham I can vouch for this. Good to see a recipe from scratch not using base gravy. Love the use of whole spices too!!

You're right about Birmingham Al, that's where I had my first "Lamb Balti" and your recipe looks absolutely authentic. You have no equal when it comes to BIR curries on the net. I will be passing the word round here in Aus. Thanks Mate!

I made this dish with chicken however I found it really dried up and would like to have had it a bit more saucy - suggestions please. I've just made the garlic chilli chicken which was fab and hubby said it tasted just like an Indian restaurant meal.

No mention of when you add the chopped green chillies! I added them with the lamb and it seemed to work. But you may have other ideas. Excellent recipes by the way!!

First visit to this channel. To be honest when I saw the chef I thought this is going to be really crap! Well as the saying goes. 'Never judge a book by the cover'. This recipe was just amazing. The step by step guidance. Prep, cooking, tips, and presentation were just perfect. This chef sure knows his onions.

Hi Ian. I used the pre cooked lamb recipe which is found on my channel. I used cuts from a leg of lamb. Good luck with it. If you choose not to pre cook the lamb, the leg cut can be pretty tender . Thx

Hi Al,Made your base gravy pre cooked lamb and pre cooked chicken and continued to make lamb pathia,and chicken korma, I must say it was the best curry i have tasted to date,thank you,My question is....when do i add the green chilli and tamarind paste to this balti?Thanks in advance.

Hi Mark. Glad you like the channel. Regarding the the chilli and Tamarind. Just put it in at least 5 min before the end to cook it out a bit. Cheers

Hiya Al hoping to try this over the weekend..can I swap the tinned tomatoes for tomato puree and water..thank you for all your hard work and amazing recipes..xx

You can swap but be careful as the Puree can be much stronger and acidic. The tin tomatoes are much softer on the taste. Try it, see how it goes. Let me know. Al

Birmingham...yes! Of course..where it all started. Near the start of this video, the text states that black onion seeds are the same as black cumin seeds which they are not. But good work...I've enjoyed watching your videos.

I will try this next...just as soon as I got all the spices. Gonna have to get to the Asian market next chance I get. I was going to do the Moroccan Tagine, but I just changed my mind lol Is this how balti is done in restaurants? It might explain why they are mostly more expensive at the curry houses round here anyway.

Hi. Yeah, I am sure you will love this recipe. Please follow closely. Do the Tagine another time but make sure you do cause it s out of this world. Yes, proper Balti houses will cook individual curries in a korai and use individual spices. All too often though corners are cut and base gravy and mix powder is used. Of course this can be done if you wish but I prefer a more bespoke curry cooked totally fresh. This should be the rule rather than the exception. +Al's Kitchen Birmingham? What about Birmingham? Do you mean the famous Balti triangle? I live just outside of Birmingham so am not a "Brummie" but was always led to believe the Balti was of Birmingham origin. Do you not agree? Another great video by the way.

Beautiful Al. Could almost eat it on its own without the lamb, and that's definitely not like me. I love the fact that I don't need to have any pre-prepared gravy. I think I might try this with Paneer, just to see if I can get away with having nothing pre-prepared at all. I'll just have to roast the Paneer first, I think?

William Watt yeah, I agree. You should also try the Chicken Karahi. It's a Pakistani recipe that's actually served in a top restaurant.

If you can't find Tamarind concentrate just use a squirt of Lime or Lemon juice.

Al, I'm doing this tonight and got all the ingredients apart from the bark. Couldn't believe how cheap all the spices were. I went to the Asian market. Until now I'd just got them at the supermarket. £1 for 35g at the supermarket, or 59p for 100g at Asian market. No brainer. Anyway I've measured everything out and prepped the blended tomato which you say should be 5 tbsp, but you use a chef's spoon to add it into the pan after the onions have softened etc. Well 1 chef's spoon alone is quite a bit more than 5 tbsp so I'm guessing you meant 5 chef's spoons of blended tomatoes not 5 tbsp? I literally stopped the vid at that point to write this, so if there's more on this afterwards no worries I'll get to it...

u didn't let it cook until the oil had separated... How can you be happy with this enough to post it?? srsly?? ur chicken tikka in the oven looks great btw

There is hardly any oil in it to separate. This is not typical bir. No base gravy. The result was amazing. More than happy with it!!

+Al's Kitchen exactly.. not enough rso in the pan..u got a good spice mix but the colour, cooking time and amount of oil are not in spec..you even use the phrase 'the authenticity of the dish'.. but recipe strays so far from an authentic balti #NotABalti

Esp like the hellfire, excellent.Your base sauce is v good.This one here would be great if it had a bit more oil, bit more flame, longer bubbling phase. Your timing in adding the fry ingrd. spot on. on another vid I just noticed you see the value of letting the fat separate.

You just lost a subscriber Al. Why diss Birmingham where the Balti was born? It is a shame because I really liked your channel but rather than stick to cooking you had to alienate people from the second city (how original).
