This is Edo mae style Sushi? I love the curing that style does, i do prefer it to ”just as fresh as possible” brings out the umami of the protein in a wonderful way. Thank you for your teachings:)

Thank you for stopping by Kai Eliasson san! Indeed it is Edomae style, curing was pretty much the only method to preserve fish as long as possible, back in the Edo period when there were no cooling machinery - I bet people from that era are so envious of us being able to enjoy fresh fish like we do now! ;)

is the soy sauce brushed on top of the nigiri regular soy sauce? or is it a special kind? it seems really light in colour. nice video
