I am new to cheesemaking, so I am still learning the different uses for thermophilic cultures and mesophilic cultures, but I do know what you need to make Manchego Cheese. You will need the following items, and to pay good attention when watching this video!
1 gallon of milk
Mesophilic cheese culture
Thermophilic cheese culture
Calcium chloride
Lipase
Rennet
A thermometer
A double broiled pot (or sous vide water bath)
Cheese curd cutter of choice
Cheese cloth
Cheese mold
Tupperware container
Note: You can use a regular fridge at the lowest setting if you are using a Tupperware container but a fridge at 55°F is best.
