If you want the best outcome from making moi moi without having a broken bag or the need for a steamer, start keeping your tin tomatoes can. Tin cans make your moi moi come out with precision. All you have to do is immerse them in boiling water and stack the rest on each other so as not to drop. Ensure the water level is half the height of the tin on the base of the pot. And the moi moi purée is also half filled because it rises whilst cooking. Tips: Make sure you oil the inside of the tins with little oil before pouring the beans purée. This will make sure the moi moi comes out easily. Hope you find this helpful.

Hello Chef Lola, Your moi moi looks perfect & i'm sure it taste better than it looks. I have been cooking moi moi for many years but it is usually hit and miss with me. It is either too hard, not enough salt etc. Please could you be more precise with your ingredients and what red pepper you used. I usually add fresh tomatoes and sweet red pepper to give it the red color, but it never comes out as perfect as yours. I will be most grateful for any feedback.

Although your question is 3yrs past but tatashe (big red bell pepper) would give you perfect color. Tomatoes makes it mushy. Moreso, I used to have a bit salty moi moi until I figured out that when it cooks the salt tastes more than what same tasted during mixture.

your dried beans must be soaked overnight and the skins peeled off before blending. (do not cook the beans before blending though)

some steamer basket are sold with a pot. and if you wants to get it separately make sure you know the size of your pot so as to get the one that will fit. you can get it in a grocery store or online(amazon, Walmart ,target) or check any grocery store around you.

Sabaj5.. No worries, I am here to help. I used the brown beans, but you can use the white beans called black eye beans. The mackrel was smoked and therefore rich in flavour, but I must mention that you can use any fish to make you moin moin.

Oluwatamiloreify....1) Remember I blended them in 2 batches as my blender was not big enough to blend it once, so mixing it thoroughly will give you full consistency of the moin moin batter 2) As you could see that, I added other ingredients like Salt, Oil after blending, therefore mixing it well will allow the ingredients to be evenly distributed and most importantly make your moin moin smooth and soft when eating it. I hope that answers your question.

are you soaking your dried beans in water overnight before peeling and blending? any blender should be effective after the beans have been soaked as they become so soft you could crush them with your fingers

Grinding to remove the skin? I think I'm going to try not soaking at all and use the blender method. Not an expert, but soaking makes the skin too soft when using the blender.
