INGREDIENTS: in order of process •Carrots whole (finely graded) •Flour 2 1/2 cups •Cinnamon 2 tsp •All spice 1/4 tsp •Salt 1tsp •Baking powder 1 tsp •Baking soda 1/2 tsp Mix these dry ingredients^ •Brown sugar 1 cup •Sugar 1/2 cup •3 eggs Mix these wet ingredients^ •Slowly add in vegetable oil 1 cup gradually Then gradually mix in dry unto wet ingredients •Raisins 1 cup mix in 1 1tbs of Flour to raisins then add into mixture •Add in graded carrots •mix in crushed pineapple 1 cup Bake at 350 for 25-30 mins FROSTING: •Butter 1 cup (room temp) •Cream cheese 12 oz (room temp) •Vanilla 1 1/2 tsp Mix these all up •Powered sugar 2 cups ( mix in gradually ‘1/2 cup at a time’)

I made this yesterday following the exact recipe, took a few hours including clean up, but it was the best cake I have ever made! Crushed pineapple is essential in the batter. So moist and well balanced flavour, highly recommend.

I made this cake yesterday but by accident used dark brown sugar instead of light brown sugar so cake was a little darker in color. Also for some unknown reason my cake was not moist nor did it raised. Do u think it was because of the difference in sugar? Anyone. Knows.

This is the BEST carrot cake recipe online--TRUST ME!!! I made this yesterday and I can't believe how wonderful it came out. I was worried about it coming out too wet, or as one big lump, instead of having a moist cake type of texture, but no worries since the texture was absolute perfection. I did make one change, though. Instead of using one cup of pineapple, I used one cup of buttermilk, and I omitted the allspice altogether. Other than that, try this, and don't bother with the other cc recipes u come across b/c i guarantee they won't come out as heavenly as this one. ❤❤❤❤❤✌

Two carrot cake tricks I learned from America's Test Kitchen we're to use extra baking powder, since it's such a heavy batter, and also to add a little baking soda for lift and help soften the carrots as they bake. Also, when you're making the frosting, first whip the butter and confectioners sugar and add the cream cheese (not too warm) last because if you over beat cream cheese it softens too much and never goes back to quite the right texture.

I did it. It's absolutely amazing, Best cake which I ever had. I added less sugar, maybe 50% different from the original recipe. She's right adding pineapple is a really good trick. The cake is lovely, very moist, spicy, and cream cheese with butter it's very light and simple. For me absolutely number one.

I took your recipe yesterday.. I've tried it..and mashaAllah it's moist than my previous cake..i followed all the recipe accordingly..at first the batter was quite thick and i was worried for a second,like where i went wrong but i keep on going ,when i add on all the carrots and the pineapple than the batter change a bit liquidity..so for those who read my comment don't worry..
