Thank you both for giving out instructions and not just talking to fill up airspace. Comments like adding parsley to the salad, using bulghur instead of rice, lightly stirring in the fried onions to avoid mashing the rice, etc. were informative.

Hello, my sister who was married to a Lebanese man taught me an alternative method. She first fried the onions which she removed from the pan when caramelized then added the lentils and rice in the same dish she cooked the onions in. This method gives a great flavour to the lentils and rice instead of just cooked in water.

I just made this dish for dinner, and my partner and I love it! I don't eat vegetarian dishes on their own often, but this is something I can definitely eat all the time! The flavours blend so well together and the smooth silky caramelised onions give the dish a sweetness that mellows the cumin. Lovely, and I remember my mother preparing it when I was little. I was born in Cairo ,Egypt and we had to leave in 1956, my family came to the uk. Very long story, but i am now in my mid seventies and I am going by memory and how I remember the look and the taste of how things tasted and looked at Especially the food mum and grandma cooked both of Italian background but Egyptian food the best and a great variety…. YOUR RECIPE IS VERY GOOD INDEED. I MAKE A VERSION OF THIS RICE WHICH IS AS FOLLOWS: AFTER THE ONIONS ARE ALMOST FRIED, I ADD CHOPPED DATES AND RAISINS AND THOROUGHLY MIX WITH THE ONIONS FOR ABOUT 3-4 MINUTES. THEN ADD SAFFRON INFUSED IN LITTLE HOT WATER TO THE MIXTURE AND ADD THE LOT TO THE LENTIL RICE. JUST THOUGHT TO SHARE THIS.

1, wow never thought of adding camun to injectable, we always just did it with salt and pepper. 2 you can never have too many onions, my gtarandmother would dice some into the rice,& fry crispy for on top. My mother, she carmalises the onions like mad, again mote the merrier, and pours it and it's oil on the rice as it cooks in the oven, the longer itmcooks, the darker it gets and so so good. Yes, in my house, from my grandma, we like to start it, & most rice things, on the stove & finish it in the oven. You put it in the oven when the water comes to a boil or when the water comes just about to the level of the rice. Also also, yogurt is a classic combo with injedra, and or Syrian tomato salad. Perfect comfort food Side note, never heard of it being done with buragol, but it must give a great textural difference, also I'd consider then baking it to give it that extra crunch on the top, like youmwould,with buragol b'jibm.

Wonderful. Another favorite of mine. One difference in our process is we cut the onions a little smaller and saute' them in the dame pot before cooking the lentils. I found this gives added flavor to the dish (and one less pan to wash). Also, we often top it with Arabic cabbage salad (my own creation). It's an amazing combination. Even cold in Arabic bread with the cabbage salad. Great for picnics.

I think whatever you personally like is ok-- there is cumin in the dish itself, which is why I leave it out of the salad. :)

I find coriander and fried onions works better for texture, adds a crunch. I’m not much on vegetarian cooking so I add this as a side dish to a nice roast. My mother prefers to just eat it plain. But a nice vinegar and tomato based sauce goes very well Mujaddara. Your recipe goes very well!

I am not a fan of cumin, because it reminds me of bad odor from ppls underarm. After watching this video over 10 times, I finally made it today and added a teaspoon of cumin seeds. I was surpried how well cumin matches with lentils, the caramelized onion is like the whip cream of a cake, I am amazed how flavorful a vegetarian dish can be. Thank you Blanche! The Roman legion would add as much cumin allowed to their lentils to taste or if they cooked chickpeas they were allowed as much wine to taste. This mix of cumin and lentils is as old as the Ancient Egyptian Empire. Our ancestors knew best!

Love it. I sometimes add a tahini yogurt sauce similar to what's on Fettah (chick peas, with a yogurt tahini sauce). Do you have any vegetarian koosa or stuffed bell pepper recipes? Seems to be kind of hard to find... My grandmother (Syrian) used to make it all the time along with wara 3enab (stuffed grape leaves) but it had meat in it. Still delicious, but just looking for veggie options

I had this last night with a herbed tahini dressing of parsley, dill, garlic, evoo, lemon juice, water and tahini paste. In the blender for 90 seconds, stopping to scrape the sides and top incorporated into the blades and that dressed my salad 🥗 🥗 🥗 A truly wonderful culinary experience, with such simplicity.

I absolutely adore mujadara and love to take some for lunch to work. For something that's so easy to make, it tastes delicious and is super nutritious. I really like how your mamma stirs the onion through the rice - the onion really brings this dish together and having it in every bite means perfection! Guys you are amazing, we call it in Iran, Adas Polo, it means lentil rice . its one of the out favorite dished . Sometimes we add fried dates and minced meat with cinnamon to it too!

I've been making this for a while but I stubmbled upon this NOW (MArch 7, 2018) THANK YOU. I add more spice and cauliflower and chick peas but my combo always comes out sticky. I am going to Totally try this (this weekend. cause i could live off this, and it's lent!) so happy I stumble upon this. THank you, and Happy Easter (from the Irish Catholic) :D
