The 1/2 cup of brown sugar takes this recipe up several notches over other recipes I've tried; excellent addition! I was able to cut the white sugar down to 7/8ths of a cup instead of 1.5 cups, while maintaining plenty of sweetness. Very happy to have found your video! Thank you!

You might not see this Matt but sincerely as a kid under the age of 18 I’ve made these over 50 times over the past 2 years after I started cooking and baking more during COVID. In my family we call these oatmeal candy cookies. It’s a family favorite! I am 48 years old and my 90-year-old grandmother has been making these since before I was born. Lol And this year for Christmas my youngest baby girl who is going to be 18 in a month decided she wanted to start making these on her own as well. So this is a fun recipe to pass on 🥰

My mama passed away when I was 12 and we would try and make Sunday our baking day but her last couple years her health was severely declining so we started trying shorter and less complicated recipes. This was her ultimate favorite one and I never remembered what they were called and your video just so happened to pop up in my recommended and I'm so thankful. Seriously, thank you for this video! I saw this video and tried to make it using whatever I had at home. I used 1/4 cup cocoa powder,1 cup margarine instead of butter(that's what I had at home),half a cup of milk,1 and half cups of brown sugar,vanilla extract and 3 cups of oats. I did not have any nut butters so I omitted it altogether. It could be my modified recipe or the fact that Malaysia is hella hot,so it did not set properly even in the fridge. I baked them instead at 200°c for 15 to 20mins and it turned out incredible!! Thanks Matt!

@@stevenking9357 How long have you waited for them to set? Did you put them in the fridge? It may not have boiled long enough, once it comes to a boil, let it cook for at least a minute but you may need to do two or three, stirring of course. Usually, that is the culprit for recipes like this not setting.

My only deviation from the recipe was I used dark chocolate powder instead of the standard cocoa because that's what I had on hand.

If you allergic to peanut butter you can add a bag of chocolate chips instead. It binds the mixture wonderfully and makes them super chocolatey.

These cookies take me back to high school.First time I made these was in home economics. I did some changes in my batch, this is loaded with sugar for my tastes. I don't eat a lot of sugar, I omitted the white sugar, brown sugar, and used 1/2 cup of honey. Plenty sweet for me. Thank you for this easy peasy recipe!

We always called them " Chocolate Oatsies". A little different as my mom loved coconut. Use all white sugar and substitute 1/3cup of the oats with 1/3 c of shredded coconut. They are amazing.

I have not seen this recipe before. But I was at a party a few years back and someone brought cookies that I think was made with this recipe but they used Rice Krispies instead of the oats. Looks easy enough and delish too.

To help the cocoa get incorporated, mix it with the sugar before adding to the melted butter and milk mixture. It helps take the lumps out of the cocoa and mixes in better. Also, use a larger (still heavy) pot to mix the liquid portion together and then add the rest of your ingredients to the same pot so you don't have another bowl to wash (you can tell who does the dishes in my household). If you ever have problems with these setting up, the butter/milk/sugar/cocoa mixture needs to be at 230 degrees when you take it off the heat to add the rest of the ingredients. If anyone has ever had cookies that don't set up, this is invaluable information (I have a small digital cooking thermometer I got at a yard sale for $2 and it's one of my best purchases ever). These cookies have always been a favorite of mine. I do love the brown sugar addition and think I'll make some of these right now! Our dog is out walking my hubby right now so it'll be a great treat for when they get back (for hubby only)!

You can also use a sifter with the cocoa powder to take the lumps out if you have issues with lumpy cocoa powder. And yes the biggest issue with these not setting is it wasn't heated hot enough. With that said, a thermometer isn't absolutely necessary, it is more forgiving than something like fudge, because of the oats, but if you got one, use it for sure. Have fun!

Made two batches today... One with regular cocoa powder and one with dark cocoa powder instead. Both are AMAZING. Definitely recommend them! You have to put them on the foil fast if you want them to look nice (then give a while for them to cool fully). Imagine how cute they'd be shaped like a birds nest with little chocolate eggs in the center with some shredded coconut or something. =)

Would like to know what ì can substitute the white sugar with ? can honey be used ?

Yep you can use honey, but don't use an equal amount. use 1/2 cup of honey If you are going to make this amount, otherwise cut this recipe in half and only use about 1/4 cup of honey. You will need to adjust according to your taste. You can also use some maple syrup. coconut sugar can be used as well. Use 1/2 cup of that for the full recipe.

I've never done this with brown sugar, but I'm curious. I remember making these as a kid from a Mulligan stew recipe. I saw a tip on another video, that said you can slightly toast the oatmeal to eliminate a mealy flavor. That sounds like a good idea.

Matt, thanks for this, i'd had a recipe for this ages ago but misplaced it ; there are different varieties of this, like not having peanut butter or any nut butter / or using mashed banana's instead and / or adding nuts or raisins or coconut etc.. :) simple and yummy

Going to try to make these today. Other than nut butters, are there other alternatives? Can almond milk be used instead of milk? Hoping you answer these questions today because my mouth is watering!

Hello :) Some people leave out the peanut butter altogether. So you can definitely try that. Yes, almond milk should be okay in these, although I haven't tried it specifically. It looks like you will just have to experiment. :) Good luck! let me know how it goes.

@@inthekitchenwithmatt I boiled the unsweetened almond milk, sugars ( granulated sugar cut to 1cup), butter, and cocoa. Added vanilla extract. Then poured half into a bowl and let my boyfriend add his peanut butter and oats. In my half I added oats and coconut flakes. I'll be making this treat OFTEN. Next time I'll try Stevie for the granulated sugar. An enormous THANK YOU for mentioning quick oats. The recipes with oats mostly say "old fashioned oats" and never mention if quick oats can be used. I always have quick oats on hand. Thank you for the recipe!
