The way you show how to wet the rice paper by rotating it in the water instead of submerging it is the BEST method. Plus, when I saw that you put it directly onto the work surface instead of on a plate, I did the same thing letting the edge of the rice paper hang off the edge of the table so that I could easily pick it up. It also helped to see that you took your time once the rice paper was on the work surface instead of treating it like it was urgent to get it filled right away. You have made rolling rice paper the easiest I've seen. Thank you

A) Loved the video. B) “Rice paper rolls” is such an elegant and descriptive term that it might finally put to to rest the East Coast/West Coast nomenclature battle that has been raging for years! Here, on the Atlantic side, we call them “summer rolls”. Over by the Pacific, they call them “spring rolls”, which to us East Coasters describes something smaller and deep-fried, like an egg roll’s dainty little sibling. Anyway, from now on, they’re “rice paper rolls” to me!

When preparing summer rolls my kitchen looks like a battle field. I swear, it's just raw war. On top of that I'm on the verge of a nervous breakdown when fighting the wet ricepaper for ever single goddamn summer roll. When I'm done after about two hours I need to rest and take a nap and I'm done for the rest of the day. I'm not joking.

Thank you for showing the proper way to soak, but I actually want to comment on how much I enjoyed watching you. YT is normally painful for me. Either the intro is too long or the camera is shaking or the person overacts for the audience. You have such a great presence in front of the camera, I actually found myself smiling while watching you. And the touch of humor with the drink was very cute. ❤

Oh my god. I should have watched this before attempting it. My rice paper rolls were AWFUL. I filled up the entire one side of the paper and tried to roll it like an imbecile. It was horrible. But I convinced myself what I was doing was sophisticated and delicious. All the food instantly fell out the rolls and I was dipping them in Goma sauce, but everything ended up in the goma sauce, so I ended up just mixing everything and the goma sauce, making a big bowl of destroyed paper rolls and goma sauce.
