The white sauce is Kashk, basically dried yoghurt. Yes I make my own saffron water

where I live, they don't sell reshteh. how can I make my own reshteh from scratch?

its a little complex to make in small batches without the machinery, basically they are thick salty noodles so you could possibly subsitute for thick spaghetti to get a similar flavour

you can use 'fettuccini' noodles
