Chef I have a question please. 1-the sushi vinegar some people put it on low fire to dissolve the sugar and salt and some of them boil it .In the video just you mix it even without fire which one is better ? 2-the sushi vinegar it makes the rice sticky is that right chef ? 3-And if we boil the sushi vinegar will it make rice more sticky ? Mazen Bahaa-Eldeen only reason we use fire to dissolve sugar and salt is that it is easier. But from my experience you can do that without putting it on fire. That is more work.

I use it for about 2 weeks in room temperature. But if you want to keep it longer you can put in refrigerator.

You mean the ratio is 1 liter tempura flour to 1.4 liter water or 1 kilo tempura flour to 1.4 liter water Thanks
