Chocolate chip cookies
Ingredients:
All purpose flour 149g( 1 cup)
Bread flour 393 (2 1/2 cups )
Cake flour 59g ( 1/4 cup and 2 Tblspn)
Salt 9g (2 1/2 tspn)
Baking soda 10g (2 tspn)
Butter melted 490g (2 cups + 4 Tblspn)
White sugar 286g(1 1/2 cup)
Light Brown sugar 136 ( 1 cup)
Molasses 34g (2 Tblspn) (optional)
Vanilla 16g ( 1 1/2 Tblspn)
Espresso powder 2g (2 tspn)
Whole eggs 2 each
Yolks 2 each
Semi-sweet chocolate 275g (1 1/2 cup)
Dark chocolate 262g (1 1/2 cup)
Note:
If you are using dark brown sugar instead of light brown sugar you don’t need to add the molasses.
I bake mine at almost 20 minutes the edges was a bit crisp and soft and chewy in the middle just the way I like it.
