Thank you for sharing all of this great info! I'm so happy to hear your cheery voice in my kitchen again! (I listened while I was preparing California Poppy for a tincture!) I have been interested in bitters for a while now, wondering if it might help me and my hubby with our acid reflux as well. I tried apple cider vinegar, and honestly, it often ramped up my acid! But I've been afraid of offering something so bitter to my hubby. He is the best, and even eats my "burnt offerings"! But I'm not going to give him something bitter on purpose, and this might fit the bill! Thank you again!❤❤

Hi Mary. I still enjoy your videos but have radically changed how I eat - so I won't be making this. Two years 4 months ago I was over 250 lbs and had t2 diabetes. I felt awful most of the time. Got tired often. Brain fog. Depression. And I could tell I was in bad health. I feared I was shortening my life, and I was - so I finally found something effective and meaningful to do about it. I stopped consuming PUFA (canola oil, corn oil, soy oil and so on) and went keto. The excess weight dropped fast the first year. I went from size 44" waist jeans down to 40" quickly. Those were still in our closet. Then had to find my old 38" jeans - in a bottom dresser drawer. Then my ancient size 36" - in a bag in the garage - we'd forgotten to take them to Good Will years ago. Now I wear size 34" and can get on size 32" in the dressing room - and snap them - but 32 is still a bit snug. Later this year, maybe. But the most important thing is that my type 2 diabetes went away in about 4 months. I am no longer obese. Within a year I won't even be overweight. I can sprint again. I sleep well and feel great. No more brain fog. No more depression. I've moved from keto to carnivore - really dirty carnivore (I still drink coffee and use pepper and hot sauce). And it's even better. Investigate Dr. Ken Berry on KZbin. Chris Cooking Nashville, Keto Twins, highfalutin low carb - very interesting low carb-keto-carnivore cooking channels. I don't need digestive aids on this diet. I essentially live on steak, roast trip tip, and hamburger steak - plus bacon and eggs and some dairy. I don't get acid stomach or indigestion any more, like I did all the time eating carbs and plants. Our paleolithic ancestors were obligate, hyper carnivores. Scientists use isotopic analysis on the bones we dig up - and in every case our ancient ancestors were eating 80% to over 90% meat - mostly fatty red meat. Not much carb. The bulk of the rest of their diet was fibrous, not-high-in-carb roots. Probably cattail/bull rush type root. We ate very little carb for over 99% of our species' existence. We can live on fatty ribeye steak, water, and maybe some salt - and thrive and be very healthy and happy - and nothing else. We don't need to eat plants, ever. People can if they want. Some of us do okay on plants. But it looks like autoimmune disease is caused by plant consumption. Thousands of people have found out on social media that their IBS, Chrohn's, Ulcerative Colitis, Psoriasis, Hashimoto's and even really awful ones like M.S. can go into remission on a carnivore diet. Everyone seems to get at least symptom relief. Many maybe most get remission. No one in "official" medical circles is talking about this. Anyway, you may not need a radical diet change. I sure did. I'm so glad I was able to do this. It feels so awesome having my health back, having no brain fog and depression - not worrying about diabetes any more. Hi Mary. Thanks for sharing. The carnivore diet isn't for everyone. And I suppose it does have something to do with our ancestry. Vegetables...ugh, I pretty much can't eat em. I eat fruit and meat, generally. Started years ago with homemade soups/broth and honestly lost like 35 lbs in no time at all. I have since added some of those too high in carbs back in. Or I would become a skeleton! I eat carbs about 3 days a month because I love them, being of Italian ancestry, What a glorious 3 days it is! Haha. I know it feels great to look in the mirror and see yourself as you were before all the hormones, the poison in our food supply and the fast and easy junk food entered our lives. I'm very happy for you. I actually had to go out an buy NEW JEANS! It's a great feeling! I also went back into my old jeans...some from 30 years ago! But nothing like buying those 27" Levis again. Back to High School weight! Woohoo, go US!

@@Sue-ec6un great, I went from 44" waist jeans to 34, what I wore in high school. Not long ago I tried on size 32 and snapped them, but they were a bit too snug to buy. Maybe later this year. I was size 44 2 yrs ago. The weight loss is great - people I haven't seen in a while stare at me with astonishment, and one said "you're literally a new man." But the health gains are the best. No more diabetes, brain fog, depression. I sleep well and feel great. If you can make a low carb diet work, great. Or keto. Basically people try this: no PUFA but still eat the other bad stuff (lowers inflammation some but little else) - all other diets assume no PUFA. No sugar: still eat starchy carbs but cut out sugar, high fructose corn syrup, honey, fruit juice, some high sugar fruits (young healthy people can do ok with this). Low carb, set a daily carb limit in grams, like 100g - or 80 g - or 60 g - what you usually see. This can put early type 2 diabetes into remission. Keto is usually 25 g of carb/day or less, w no grains or starchy carbs, like potato, almost no fruit. In keto we go deep into ketosis, many health benefits - like mitochondria repair and rebuilding. Keto people can have 4 times the amount of mitochondria than people on a "normal" American diet. Carnivore you just try not to eat any plants - tho "dirty carnivore" is common, where people still drink coffee, use pepper, some condiment made from veg, etc. No plant at all and only beef or lamb is lion diet. People w autoimmune disease do great on carnivore. Good luck.

Another great video! Mary, I have learned so much from you since discovering your channel about 5 years ago. Also, from your incredible book. My question is, since I really don't like the taste of licorice, can I cut down on the fennel seeds and if so by how much? If not, then I'll use what you recommend.

Be sure to check out the blog post and full recipe here: marysnest.com/how-to-make-the-most-flavorful-strawberry-digestive-bitters/ If you make bitters with alcohol, you can usually store it in a cool dark pantry for up to 5 years - or longer. If you make bitters with raw ACV, it's best stored in the fridge and will last about one year. But I highly recommend that you read the blog post and corresponding recipe. Love, Mary
