My rendition of okro stew, a popular west African/Ghanaian dish, inspired by my mother's recipe in her attempt to encourage my father's love for okro. Pairs well with rice, yam, or banku.
I do have a fantastic recipe on the preparation of okro soup coming up shortly. Please enjoy the video, try the recipe, and as always, be creative and have fun, especially in that kitchen :-)
Ingredients:
20 fresh okro
4 cups chopped fresh spinach
1 white onion chopped
1 red onion sliced
3 fresh roma tomatoes chopped
1 fresno peper
1 gloves of garlic
1 tablespoon of grated ginger
1/2 teaspoon fennel seeds
2 tablespoons shrimp powder ( a great alternative is a couple of diced anchovies)
1/4 pound lamb
1/4 pound cured beef
1/8 of a pound of cow skin
1/2 pound fresh king prawns or shrimp (de-veined)
1 fresh mackerel oven roasted
