Tilsit cheese or Tilsiter cheese is a pale yellow semihard cheese. Tilsiter has a medium-firm texture with irregular holes or cracks. Commercially produced Tilsiter is made from pasteurized cow's milk, ranges from 30 to 60% milk fat.
Some time ago I was making traditional Tylżycki / Tilsiter cheese with washed rind. In stores, we usually see Tylzycki cheese in slices;) or block and that's how I will make cheese today.
For the production, I used:
-13l of pasteurized milk at 65 ° C for 30 minutes
-2.5 ml of calcium chloride

-3ml calf rennet serowar.pl
a scarf
-form 1.5 kg 21x14x11
-brine:
-500g of non-iodized salt
-2.5 liters of water
-1 tablespoon of vinegar
-1 teaspoon of calcium chloride
