Hi there! The fat structure of the coconut milk helps give this panna cotta a luscious texture, which you'd lose with the yogurt, so I don't recommend going for soy yogurt in this case. 😃

For this recipe coconut milk works best due to its consistency and flavor (regular milk won't give you the same results). I hope this helps, and happy baking!

Real traditional (non vegan) panna cotta is an Italian Piemontese dessert made with cream milk, vanilla and gelatin. But, i just found out tonight it can be made with egg whites (i had no idea)! This is important if, like me, you are not a vegetarian or vegan but just don't eat red meat products. I discovered panna cotta in Italy and it became my favorite italian dessert - then i was crushed to learn it had gelatin in it. Yuck! (It seems you are possibly asking your question for this reason.) Now i'm happy again because i can have real panna cotta using egg whites! If this is what you are interested in, here is this Italian chef's panna cotta recipe using egg whites - VERY simple! I'm impressed and so happy to have stumbled across his recipe. Now i can have real panna cotta again! There are also other panna cotta videos on youtube using egg whites in place of gelatin...but his is short and sweet and he has a cute accent. ;) And it's obvious from his reaction to tasting it it is just as good as "real" panna cotta. kzbin.info/www/bejne/Zovcha15rqeGosk

Cute recipe. I’m gonna make one with extra unsweetened Chobani oat milk and another one with unsweetened Ripple pea-based milk and monk sugar for a low fat, low calorie, high protein, dairy free and sugar free version.

lookup Agar Bezoar - its what forms in your body. And coconut milk - well that another topic for a healthy debate. Swap the milk with soy/almond and the agar with arrowroot.

We only have frozen berris here. Do i still have to roast it as the fruit is already a little mushy after thawing

Hi Cheryl, I wouldn't roast the frozen berries, as they will turn mushy. Instead you can cook them down slightly with a bit of sugar to make a sauce. I hope you enjoy!

I'm sure it's a nice dish but it is not a panna cotta. Maybe give it a different name and say it's inspired by a panna cotta. It's like making a dish called vegetarian chilli con carne. It lacks authenticity and we are proud of our desserts.
