Her stove might just be a lower heat on that setting by default, or her pan might be slower to transfer heat. As long as your salmon turns out yummy the amount of minutes doesn't matter

Worked in a restaurant last summer. We prepared salmon by cooking skin side 4 minutes on medium-high heat and 2:30 minutes on meat side while basting with 1 cube of butter.

8 to 12 minutes seems really excessive. I sear the skin on high temp maybe 2 minutes then flip it and pop it in the oven at 350. Pull it out when the thermometer read 117. Let it rest and temp will rise another 5 degrees.

I fry between three and four minutes skin side down and then between one and two minutes once I flip. Your timings can’t be right, I can’t even imagine how burnt the skin would be and how texture less the flesh would be.

Saturated fat from butter is much more healthy than not saturared processes sunflower oil for example. If you want to cook with healthy fats you can only use: extra virgin olive oil, clariffied butter, extra virgin coconat oil, avocado oil or butter@@jackychi8787

The idea of cooking salmon is having it in gradual temperatures in each layer, from skin side 140 and top 120. If you cooking it like this, the top will cook to 140 and middle to 130. also, the oil has burnt before it finishes cooking, using sunflower oil and lower heat should prevent this.

Lemon zest for an explosion of flavor. This recipe has no acid, which is a key component of flavor. So do yourself a favor and hit it with some lemon zest.
