The sanma, or mackerel pike, also known as pacific saury, that is caught at this time of year is rich with heart-healthy oils, and is considered as quintessential autumn delicacy in Japan. Usually served grilled as a whole fish though, there are many ways to serve it as sushi.

Good try! Remove the worm if you can find. There might be some even if it’s not visible, so decorative cut on the skin helps to kill them. Reference kzbin.info/www/bejne/nmbGmJV4idCohac
