the best whiskey I've ever had was made by a buddy it was made with mostly flaked corn roasted malt barley regular malt barley and it was speed aged with oak wood and dried plums it was awesome we call it the Smokey plum It was a hundred proof out the jar but it was totally drinkable although it did help to proof it down a little bit

So cool to see all the work that goes into it. Man. That's pretty crazy that everything is all hand placed, hand done and not just a conveyor belt for you guys. Props! Also, THANK YOU for showing examples of labels. This will make this year's journey of expanding my taste range a lot more enjoyable. Sadly, I am a day behind on the dry week. Was feeling pretty blah on New Year's day and had to work outside, in the Southern California cold (AKA 52F with 20mph winds). Sucked worse not feeling well, so a Hot Toddy was the only thing that did the trick. Still, half carafe of green tea with ground nutmeg, ground cinnamon, ground clove, honey and orange slices and just a shot of 46% Old Forester isn't too bad when it comes to it.

The video's description left me a little unsure of what a Single Pot Still Irish Whiskey means, in that moment when Red Breast 15 was shown, it's a beautiful whiskey I might add, one of the great Irish Whiskeys, for sure. I found this concise definition based on what is now law in Ireland. "From the start of 2012 a single pot still Irish whiskey is one made on the island of Ireland, from a mash of malted and unmalted barely, which has been matured for at least three years in oak. However that was always accepted as the norm, the law simply enforces best practice."

I just went on a tour of Witherspoon Distillery. They don't have age statements on their bottles, but they said they bottled after 3 years. Said they did some barrels a couple years ago when we had extreme weather after 2 years. According to this video, that's not legal.

I can't speak to them specifically, but anything under 4 legally requires an age statement unless it's a "specialty product"

Question regarding bottling: I brew beer and when bottling oxidation is a huge concern. I use a bottling wand to fill the bottles from the bottom. It looks like using your bottling machine, the bottles are filled from the top. Is oxidation not a concern with whisk(e)y? I know in beer one of the main oxidized compounds is hops, so that doesn't apply here. But malt flavors are also susceptible. Just curious because I've never looked into whisk(e)y making.

Just attended a tasting at Cálem port winery. The rules of age-statement on port is kind of funky, apparently they take the average of the different wines which goes into a blend, not the minimum. So as long as you can drop in some really old port, it seems quite easy to crank up the age on the bottle :) They mentioned that they exported a lot of used barrels to whiskey-makers too, but not any specifics.. Their tawny tasted quite similar to my port-finished Teeling however, so I would guess that this is where part of the barrels go. Cheers! And please don't feed Rex too much coffee during dry-week, his speech-speed is already reaching turbo-levels. More caffeine and no whiskey will for sure turn him into a Gilmore Girl. :)

Hi UK whiskey lover here, just something to add with the aging within Ireland and northern ireland, whiskey by law must be 3 years and 1 day old in a cask before it can be bottled and called whiskey. while in the rest of the uk so scottish whiskies and welsh and english whiskies must be at least three years old. this stems from a fued between the irish and scottish distillers over the use of the coffey still in the production of whiskey. the irish whiskey museum in dublin goes into the history of it much better than I can type it. something for you to consider for another video, also if you would like to try a whiskey which is only just whiskey, Teeling single pot still aged for exactly 3years and one day it is a blended whiskey of two cask types bourbon and wine casks
