Updating this video 4 years later with the celsius conversion is actually really nice. Shows you care about the responses you get! Any suggestions on what to do with chestnuts that have a softer shell ? Could you still use them ?

Thanks for acknowledging our commitment to our community, and for your feedback :) We recommend against buying chestnuts with soft (or flexible) shells. If you can see the shell flex when you push in on it, in our experience the chances soar that the nut inside is moldy or otherwise bad. If you already have the nuts, you can give them a shot (score, soak and roast as usual). Obviously once you peel the chestnuts, take care as always to check for discoloration or signs of mold. If the nut is bad, discard it.

Perfection! For years I've been frustrated by peeling chestnuts after baking. Now I know why. I only scored them, as recommended, on one side. You showed a much deeper cut all the way around. That's key. After scoring using your method, peeling was a breeze.

I rarely write comments or reviews, but I had to review this video. I love chestnuts and I have always struggled with peeling them no matter how I scored them. Last night, I tried this method and the chestnuts came out perfect and easy to peel!!! I was hesitant about trying this method because I didn’t like the idea of having to plan ahead so I have two hours to soak the chestnuts, but now, this will be the only way I make chestnuts from now on. I grew up in the 50s and my Dad would buy chestnuts every autumn to roast in the oven. I can remember him piecing them before placing in the oven. He was from Bradford Yorkshire and loved roasted chestnuts. He was the only one in the family that seemed to like them. That was so long ago, I don’t remember what they tasted like

Growing up, my mother would roast chestnuts, but they were very difficult to peel. Towards the end , our fingers would be so sore! She scored the chestnuts and put a damp towel over them after they came out of the oven, but missed that crucial step of soaking them for prior to cooking. Thank you! Great upload. 🙏🏻💛🌰

in portugal we put a bunch of salt on them while roasting, it makes them sweeter and we dont actually eat the salt, it stays on the peel or on the tray

This was my first time eating chestnuts. I experimented with 3 different batches. 1.) was simply scored and baked at 400°f for 20min 2.) Scored and soaked in red wine for 2 hours. Then baked according to the videos instructions (350°f for 20min then add some ice cubes to oven for humidity and bake at 425°f for 10min...let rest in a bowl with damp towel covering.) 3.) Scored and soaked in water for 2 hours. Then baked according to the videos instructions. Results: - During the baking process my whole kitchen smelled like sweet bread. - The first batch had a dry outer layer of the nut meat with a consistency of dry potato. It wasnt great. - The other two batches that were soaked before hand were moist and sweet. Now I understand the importance of keeping the nuts hydrated during and after the baking process. The wine soaked ones had very little if any wine flavor. I think next time I'll try soaking them in whiskey. Summary: It turns out chestnuts taste like dry potatoes. They are almost identical in consistency with baked Jack Fruit seeds. Overall I didnt care for them but if I ever bake them in the future i'll definitely be using the method from this video.

My husband is doing this NOW. I adore chestnuts and he's been struggling to find the easiest and the best tasting method. So far, even more difficult methods still yield decent-tasting finished chestnuts; it's hard not to find some redeeming good taste even in a so-so chestnut unless it's been compromised by mold or something. Even the so-so ones are worth eating, but maybe not worth all of the work and the sore fingers and joints. Having found your method here, we are very hopeful! Stay tuned....

I wanted to ad that we've done two batches using the methods in this video, and the advise is solid, sound, very accurate. By far the easiest peeling experience I've ever had, though a few chestnuts resisted (due to the way they were formed inside the shell, allowing the inner skin to penetrate deeply.) Also, we discovered that the bit about rejecting the nuts that have a small amount of give, or apparent space between the shell and the innards is also very accurate. We found that they yield nuts not worth your effort even if you eat what might be edible. Great video!

This looks like a nice method. I am a bit impatient and like to cook 6 or so for myself quickly. I keep them cold in the fridge, pick out 6, and poke them in 4 places with the tip of a knife. I like your scissor trick. The wide flat ones get poked in 6 places so they don't explode. I have a stainless steel basket and cook them right on the open flame on the gas stove, turning them frequently until the shells get black, smoke, and split open. This works on the coils of an electric stove as well with the chestnuts directly on the coils. Just turn them frequently. When the shells burn, they add a nice smoky flavor to the nut meat. The smoke also adds to the aroma of the house on a cold rainy night. This method of cooking makes great flavorful chestnuts in 5 minutes. There is no soaking or damp cloth necessary. Going from fridge to fire makes the paper inside the shell separate easily from the meat. I save the shells and burn a few in the basket on the stove before friends come over. Its an alternative to a walnut wood fire which also smells delightful.

Whenever I roast chestnut, I can easily remove the outer shell but the skin is just stuck and impossible to remove... will the soaking help? Where am I going wrong?

We used to live in Paris and we could buy it around. Christmas holiday all over the street of Paris like 6 for a 1 frank ( it was in 1980-1990 so they still had frank if I am not mistaken ) but I haven’t seen any for sale even in the groceries in MN yet ! We all loved it 😊

Hello-- Here are a few reasons why you want to soak: 1) Facilitates Peeling: The outer shell of a chestnut is tough and can be challenging to remove. Soaking chestnuts in water softens this outer shell. After roasting, the softened shell and the inner skin (pellicle) tend to separate more easily from the nut inside, making them much simpler to peel. 2) Prevents Shell from Burning: Soaking adds moisture to the shell. This moisture turns into steam when the chestnuts are roasted. The steam helps in cooking the chestnut evenly and prevents the shell from burning or getting too brittle, which can happen if roasted dry. Improves Texture: The added moisture from soaking can also prevent the chestnuts from becoming too dry or crumbly when roasted. It helps in achieving a more tender and moist texture inside. What is the difference in taste if you soak them in wine instead of water? Yaah😄i did this 2 times today.first Time i soaked in a coconut milk instead of wate r😁,i didn’t time re ally accur ate and i cut into almost all. The chesnu ts🤣some were almost in two parts .finally it came out so dr y. And stong like some crackers 😁🤭.2nd one,i did everything nice,i d I didn’t c. Ut int o t he nut s(i f ound out the tr ick of cutting t he cuts😊)i soaked in sugar and salt water,used my alarm for the timing and it came out perfect except that some nuts were bad .i didn’t really pay attention to the selection of the nuts the way you told us🙈.Thank you so much...i was lazy to do this initially🤭but now i am glad I learnt and did something new 😉.you should be appreciated 😘😘

😂 after trying to roast chestnuts myself for the first time! They blow up everywhere! It was very scary! Even after I took them out of the oven they were blowing up in the kitchen! N their skin left in the oven was on fire! 🤣 they should come with a warning! Then found this vid n can see whyyy u should cut them first 🤦🏻♀️

I buy them directly from growers in USA northwest. I freeze them and can enjoy them long after the holiday season.

The good old days when energy wasn't so expensive, nowadays you fill the roasting pan to the brim, to avoid cutting your finger look in amazon for chestnut peeler or chestnut cutter

Works so well but such a shame these days, in the UK, you can only seem to get them in supermarkets sold in a net and you always have to thrown about a third away. Got some this week from Lidl - only a few were large, round and shiny, rest were soft and and small or black inside - poor show Lidl!

I didn't think about to roast Chestnuts. I boiled them. I couldn't figure out about ice caube part in this video. Thanks

@@upendome887 I eat both but I prefer boiled. Boiled is sweeter and more powdery soft. Roasted are nice too but less sweet, they seem to lack moisture to me and are a bit more rubbery / solid. So it depends on your preference.

Great video. I like chestnuts but the process to make them won't work with my short attention span. I make fall of the bone ribs and chicken in about the same time..

Mostly didn't work for me. They were large, but all too soft with that cooking time. Only a few came out of the shell easily.
