If you're in the US and there is a Kroger. Get their shaved beef (says for cheese steaks). It's what I switched to when the pandemic started for bulgogi meat. Ribeye is better sliced thin (but you need a butcher).

Walmart sells a 'shaved beef' that I have used in similar dishes and works well. It's just thinner than the bulgolgi meat sold at our local Asian market, but in a pinch it works great. I also have used it in a beef/ broccoli/bell pepper/onion stir-fry and got rave reviews from the kids.

I went to culinary school and totally get your feelings on food critics & going out, lol. Especially when you encounter a situation where the food is just bleh or bad but pricey, your brain starts reworking the recipe and tells your subconscious 'you can do better at home .

Wow! I didn't click that you can make a "broth" from cooking meat in boiled water, this is so much faster and easier than the traditional way of broth. Fun fact (that I'm sure you already knew): The "oya" in oyakodon means "parents," the "ko" means "child" (the "don" means "bowl.") So, oyakodon gets its name from the fact that the parents (chicken) and child (egg) are in the same rice bowl 😈 I guess the 한국어 literal version would be 부모아들덮밥 🤣

Traditionally you would use rib eye. Freeze it for about half an hour to cut it super thin. Any beef for short cooking would work, don’t use anything for braising.

What cut of beef 🥩 is that? (I’m new to cooking Korean or Japanese food, & we have no Korean grocery stores in my area). I think if I buy the right cut, I could freeze the piece of beef for awhile to make it easier to slice so thinly.

Was the clam chowder over the beed bowl good? you mentioned it twice, but you didn't say if you thought it was good. I love yoshinoya and have never mixed the two, but now i'm curious. Sometimes I use fresh mushrooms (shiitake, enoki, sliced baby portobello, shimeji) or a bit of canned bamboo strips (rinse good to get some of the smell)
