It looks like you have something in the buttercream you used for crumbcoating.. like blended cookies I guess. It looks totally different from the one you used for final coating. Can you enlighten me please?

Alright, that's compote, it has cake crumbs in it. I use it to seal up the layers before crumbcoating.

How do you know if you need to dowel it or not haha im making my daughters birthday cake making the cake in a rectangle baking tray so it's quite large and just want 2 layers so 2 cakes the first cake feels heavy so would I need dowels or just lay the two cakes on top of eachother with a buttercream in the middle of the two If I do dowel it do I just put the dowels in , I've never doweled a cake but I've done layered ones before

If the Cake is tall, has fillings, is tiered and/or requires being moved from one place to another, then it would require some form of support as this is safer to avoid mishap. So, if it's a two-layered rectangular cake that would sit in the baking tray, then you're good to go without support. Just handle with care as cakes are 'naturally' fragile. Hope this helps. Cheers!

You're welcome Amarachi. If you can work your way around it for buttercream cakes, then you don't really need to but for fondant cakes, yes, it is.
