Vortex Grilled Wings | Spicy Grilled Chicken Wings with the Vortex

If you’re a fan of grilled wings and you’ve never heard of a Charcoal Vortex, then you really need to check this out.
The Vortex will change your wing game. It creates a two zone, high heat grill that perfectly cooks wings every time. The skin is crispy and the meat is juicy and tender, plus you can add a piece of wood directly over the vortex for even more flavor.
In this recipe I season a family pack of whole chicken wings with Swine Life - Mississippi Grind rub.
Let the wings air dry for 20-30 minutes while the coals get blazing hot. The vortex increases the heat in the kettle grill and forces it around the chicken wings without burning the outside. The result is a perfectly cooked wing.
It takes about 30 minutes to fully cook these wings and I flip them half way through for even cooking.
I always use my Thermapen - www.thermowork... to verify the internal temp. I'm shooting for 165 - but with these whole wings you can take them up to 170-175 without loosing much moisture.
While the wings are on the grill melt 1 stick of butter over medium heat in a small sauce pan; add 1 bottle of your favorite Hot Sauce along with ¼ cup of Killer Hogs Vinegar Sauce and reduce the heat to a simmer until the wings are ready.
Place the wings in a large bowl and toss in the sauce (it’s easier to work in small batches). I serve them with a creamy ranch dressing along with plenty of celery and carrot sticks to soak up some of the heat.

I recently gave this method a try this weekend. Outside of deep frying your wings this is the best (and easiest) method to cook them. The pecan wood gives the meat a good light smoke flavor while the indirect heat crisps the skin up and keeps the meat super juicy. I highly recommend!

Good old Weber kettle. So versatile, so easy to use! Best all around cooker ever made. Don't tell my Backwoods smoker I said that...lol.

Vortex wings are the best. A couple things you might try...dry brine the wings with kosher salt, uncovered, on a rack in the fridge for at least a couple hours. Pull from the fridge and let them dry out for about 20 minutes. Toss them in a bit of neutral oil and season. Put on the kettle with the vortex and vents wide open. Crack the lid a bit, so you really drive that temp up to over 650 at the grate...I don't flip the wings...just let them go and check them in about 25 minutes. Then toss in favorite sauce, and "roll" them directly over the coals to char them up..so good and crispy double char buff wings!

I just did a lime wing rub- with hickory wood on the grate above B&B brisketts --- the color of the wings OMG- beautiful-- i did skin up as you did 20 mins-sprayed with canola aerosol-- flipped and did 15 more mins.. 178it perfect !!!!

I made these yesterday with some thighs as well. Best grilled crispy chicken I have ever had. The flavor was amazing. I only recommend you fill the vortex half way because filling to the top will produced too much heat!

I love love the vortex . I do turn the the lid a quarter turn every 10minutes when the vent comes back to the start they are done perfect everytime. I havnt even found the need to flip them anymore

This is how I cook mine too except I give the lid a turn every 15 minutes and I also don't flip the wings. Mine are usually done in 40 minutes or so.

I've been using the Vortex for wings for a couple of years. It's the only way to do wings. You should check out the Buffalo Seasoning from Owens BBQ. It's fantastic!

Great job as always! Personally, I like taking dark meat to around 200 degrees internal. Takes that meat from rubbery/chewy to a nicer, firmer bite - more like white meat texture. Doesn't dry out at all at that temp.

little tip.. for any cheap skates out there like me, just a good old cut out large coffee can makes a perfect vortex charcoal holder. Beats forking over $ 40.00+. to Weber.

I have the medium vortex and it's great. However, I do get the exact same results with weber charcoal baskets in the center. The cone shape of the vortex does free up some real estate compared to the baskets, but other than that, I can't tell a difference. Wings look great.

I've tried the basket method too, even did a side by side comparison with two kettle's going at the same time. I always seem to get better results with the vortex. The wings seem to have crispier skin on the vortex.

Great video. I use the Vortex to cook wings and is pretty much the only thing I use my Kettle for anymore. I have the PK 360 like he does and prefer to do most of my grilling on it.

You will need the Medium size Vortex for your 22" Weber sir. You can buy if off Malcolm's online store or Amazon. Be careful when buying it from Amazon as they sell a medium "mini" size one. You want the regular Medium sized. ✌
