Tried and true! These artichokes from Costco are huge! I'll show you what has worked for me in the Instant Pot multiple times.
I'm 4,500 ft above sea level which means I cook mine a bit longer than some. The size of the artichoke will also be a factor in the cooking time. I also like tender artichokes, and that's exactly how these turned out. If you don't like the as tender, try decreasing the cook time a few minutes.
Some people say an artichoke can be boiled/steamed and be ready in 20 minutes...I tried with these artichokes and in one hour they still were not as soft as the IP version!
You can actually eat the stem, peel the outer layer and cook this too! It tastes delicious. :)
Bonus dipping sauce at the end!

Made 2 jumbo artichokes and followed your directions except for adding one minute to the cooking time based on the fact that my 2 artichokes barely fit into the Instant pot together! Even larger than your hefty ones from Costco! They came out absolutely perfectly and my hubby remarked on how tasty they were compared to boiling them! Thank you for a clear and concise video!

Not being critical in the least in what I am saying here as a reply. There actually is not a real need to use a trivet at all when these are steamed in the IP. Turn them completely upside down & steam them that way, instead, directly in the water. Steam rises and will flow through these artichokes easier or more evenly as they cook in the IP like that. Depending upon the actual artichoke when it is gathered, the time may vary to pressure cook them in an IP. There are some various KZbin videos of which the cook used anywhere from the time you said to a total of 45 minutes. Believe me, it won't overdo them at all with the longer time used, either. I always recommend using a serrated bread knife when cutting these artichokes, as you have more control, and it is less likely for the artichoke to move as you cut its leaves and stem off. I had never tried your mayo sauce until recently. I liked it, but my wife still likes melted butter better. Never tried using anything else as a sort of dip for them though. I frequently will also add some garlic between the leaves and onto the heart of the artichoke when I steam them. Even when upside down, the leaves seem to hold it all in place in the IP. I have seen several folk do an immediate release vs doing a slow release when they are done. I have done both ways and never found any significant difference between them though. The artichokes are one of our favorite dishes, but, they are a bit costly at our market these days. Everything has gone up though, so I suppose I'll have to adapt, as my wife and I really love the things very much. Thanks for posting this video. It is nicely done.

It's just a personal preference, and easiest for me to just press manual and enter the time.

Hey you can also cook the stem. The meat inside the stem is as good as the heart. I use a potato peeler to peel the sum of the outside and you can see the cord that looks like the heart on the inside. Try it. I also like to pull the leaves apart and put some of the garlic or whatever spices you like in between. I think of you need to press the top down you need new.

Beuatiful! Artichokes aren't really very common where I am at. I think I was probably in my 30's before I had ever eaten one!!! That looks so good and so pretty, I definitely would want to try this:)

Wow! They are delicious! You should try this! If you don’t have a pressure cooker after all your decluttering, boil it for around 45 minutes or until the leaves pull off easily. 😀

You may be able to choose high or low pressure as well as the time. Enjoy your new IP!!

You are wasting a lot of the artichoke cutting the top off and tips of the leaves in my opinion, I also eat the stems. I love artichokes and cook them with plain water on the trivet in the instant pot just like you showed for the same time.

I watched a few videos...I'm 60 and have never had an artichoke! Maybe it would be good to talk about how to take the "choke' off so you can get to the heart? :)
