Each year for many years, my daughter makes me a Hummingbird Cake for my birthday, but from scratch. Mine always has cherries on top with the pecans. I will have to try your version. This is also my mother’s Birthday cake that I make her every year. I make it homemade as well. But will try for my family to see how good it is. I too decorate w cherries & whole pecans on top w crumbled pecans on the sides. My mother’s name is Sue as well and is 10 yrs younger than you. Happy Birthday to you! From Rosen in Texas

I made it! Followed recipe as written. Used spice cake mix because it was all I had on hand. Husband loved it. Said it was the best cake I've ever made. I received a lot of credit for it. And he cooked dinner the next 2 nights!

My mother used to make this from scratch. She would put crushed pecans and coconut in the icing and she called it Bottom of the Bird Cage Cake because of the way the icing looked. Incredibly tasty cake with a funny name.

I love these recipes! Any creation that starts with a boxed cake mix is right up my alley. Actually I think I've made this cake before.... quite by accident. I was looking for a way to spruce up banana cake so I added crushed pineapple I've seen recipes for Hummingbird cake but never really made it on purpose. LOL. I love how you frosted it and placed the pecans on top. So beautiful and inviting. Thanks for sharing another great recipe. Oh and thanks to Thomas for wanting something sweet. 💝 Secretly we all were.

My mother-in-law made a Hummingbird cake from scratch. She added cherries, pecans and coconut in hers with the cream cheese frosting. She decorated the top with cherries. She never used recipes. All in her head. Several of us tried to write down as she made recipes. Just never came out like hers. She was a great baker.

I make this cake a few times a year for peoples birthdays..but..I use spice cake mix..the entire can of pineapple with the juice..and 3 bananas..I also fine crush the pecans and add them to the frosting also..this cake is spectacular tasting !!!

Wow, what a delicious cake this was!! I say was, because it lasted one evening LOL . Everyone went back for seconds and even the grandkids loved it and they do not like fruits and nuts!!! This is a keeper and I am going to make it tomorrow for a function Saturday!! My husband is a nurse and they do a monthly luncheon and he already told me he needs (4)four for the 7th of July!!! I told him how lucky he is to have a stay at home Husband to do all these fabulous recipes!! I am going to try your Hot Chocolate poke cake for the grandkids who live with us!
