I Made Fresh Strawberry Cheesecake Tart From Scratch

Here’s how to make another one of my favorite desserts - a strawberry fruit tart, with some of the best and freshest strawberries I could find in New York! Honestly, this one's more like a combination of a cheesecake and a fruit tart, so if you like both of those, and you’re greedy and indecisive like me (lol), you’ll like this one for sure!
Also, since a lot of you were asking where I got my strawberries from, I got them from Oishii! Here's a link to their shop :)

INGREDIENTS
[Crust]
1 cup all-purpose flour, plus more for dusting
1/4 cup almond meal
1/2 cup powdered sugar
Pinch of salt
1 tablespoon lemon zest + orange zest
Splash of vanilla
5 tbsp unsalted butter, cubed and chilled
1 large egg
[Tart filling]
5 ounce cream cheese
1/4 cup heavy cream
1/4 cu sour cream
1/4 cup Sugar
Splash of vanilla
Squeeze of lemon
Lemon zest (optional)
1. Combine flour, almond meal, powdered sugar, salt, lemon zest in a food processor, pulse to combine.
2. Add the chilled butter to the food processor, and pulse until sandy. Add the egg and vanilla and pulse until the dough comes together in a ball.
3. Shape and wrap in plastic wrap. Refrigerate for at least 30 minutes.
4. Butter tart pan. Lightly flour work surface, and roll the dough out to about ¼-inch thick. Carefully transfer to the tart pan. Press the dough down and to the sides and trim the edges. Dock the crust with a fork and refrigerate for another 30 minutes. Preheat the oven to 350°F
5. Bake the tart for 30 - 40 minutes and transfer the tart pan to a cooling rack when done.
6. Combine cream cheese, sugar, sour cream, vanilla and lemon juice in bowl. Whisk until soft and fluffy. In a separate bowl, whip heavy cream until you see soft peaks and combine with cream cheese mixture.
7. Pour mixture into cooled tart shell and chill in refrigerator while preparing fruit toppings (around 30 minutes).
8. Layer on fruit as you’d like, and return to fridge for an hour to overnight, to let chill and set before serving!

Not according to my traditional French pastry chef instructor. "We do not make (said in a tone usually reserved for an "ew what's that" in the gutter in a gross back alley) ...piez... 'ere. We onlee make TOTS." Things with only two compnents (crust, one filling) were apparently too plebian. Unless the filling was frangipane. 😅

@@bsidethebox they are both called 'tarte' in French so I'm having trouble understanding the difference? If there's pastry in the bottom and a filling, that's a 'tarte' 💁

@@LuciaDaCruz1250 The instructor was from France (like, apprenticed at 11 years old traditional pâtissier) and made the distinction between tarts, done in a tart ring or pan, vs. pies, done in a pie tin (and usually a good deal more straightforward).

Please do a Q & A! I love your channel since you always post the best recipes from Hong Kong, Taiwan and a lot of other places. I personally like tart more, but I only made pie before, so it's a really close battle. Also, I would love for a kitchen tour or a baking must have video!

Definitely more of a tart person over pie. Just more elegant, clean and visually impressive. And if you're gonna bake something, go for a showstopper! Recently made a salted caramel chocolate tart that turned out well, but I will definitely give this a try!

hand mixers are such lifesavers if you dont have a stand mixer! my brother's wife gifted me and mom one for christmas and baking has never been so easy lol! anyways love the video! even though im more of a pie person (classic apple pie ftw!), this tart looks so delicious!

I discovered your channel from the collab you did with Mike Chen on first we feast. Your content reminds me of older PBS cooking shows back in the late 1980's early 1990's which made me so interested in cooking and baking. I really appreciate that you provide the beginning, middle and end montage of individual steps like the tart filling to assist others. Your montages, well written instructions in the description, and your words of encouragement if something doesn't look "perfect", will provide inspiration in others to trying to bake at home. For your question: I've only really ate pies, I've never really eaten a fruit tart before, however this video gives me the inspiration to make one and try it out.

i made this yesterday! the crust was really nice and hard (just the way i like it), and the zesty, citrusy flavour made the filling all the more light and refreshing! i think it's a perfect tart for summertime :) some notes on the recipe: 1. i realised belatedly that inga didn't mention the size of her tart pan so i think it's wise to up the quantity of measurements up by 50%. the crust ended up being stretched quite thin. 2. the crust was also really wet - not sure if it was bc i used granulated sugar instead of powdered sugar, or if where i live is particularly humid? but it was helpful to knead it with a bit more flour after taking it out of the food processor 3. i have no idea how inga stacks the strawberries so nicely?? mine looked like a fifth grader in home econs did it thanks for the recipe inga!!

i actually barely eat tarts and pies! sometimes i find that tart shells are a little hard to cut through with a knife so i try to avoid eating it- i much prefer sponge cakes!!~ i really love watching your videos Inga!! i feel like im getting to know you better as a person 😆💖 have a great day and stay safe!!✨😊

I would totally love to see your kitchen! clafoutis is like a semi tart semi pie situation using cherries, however i feel that's the best combo

You can make clafoutis with any fruit. Some people like to add apricots. Also it’s made with puff pastry and reminds me of upside down cake because you put the pastry on top of the pan and flip it when you serve it.

a fruit tart is always delicious, but a good apple or peach pie reminds me of the times when we’d gather round the table to eat a pie after swimming in my grandparents’ pool during the summer. i miss them both, and hopefully after covid, i can visit my grandma :’)

I actually tried this recipe for my first time making a tart and it's delicious! A lot of American desserts are way too sweet, but this one is really well balanced! FYI, this recipe isn't too hard to make by hand either- I didn't use any machinery, so it took around 3 hours!

Question: I made a tart that’s almost identical to your recipe except without almond meal but my crust shrunk in the oven to a flat cookie even though I put it in the freezer for 30mins to chill. Why did the crust shrunk?

oh no! did you make sure that your ingredients were cold? especially your butter. also make sure you're not overworking the dough, and let it rest before rolling it out! freezing it for longer could also help.

Could be a number of things. I'm not sure about tarts, but I know for pie crusts there's a blind bake that requires some parchment and weights. The weights (dried beans, rice etc) usually push up against the crust and therefore hold the crust against the walls of the pan. Another could be actually the type of flour or butter you use (and the ratios). Too much butter, the flour can't bind together enough to form a cohesive dough (very crumbly, burns easily). Too little butter, the crust becomes becomes too dense and hard. Try to not to use a low-gluten content flour (like pastry or cake flour) as this will also weaken the structure of your crust. Thirdly, my suspicion is how evenly your ingredients are mixed. Definitely make sure there are no pockets of flour in your dough and that all the butter/egg has a chance to be evenly distributed. Lastly, my suspicions are actually in how a lot of crusts are rolled and placed into the pan. Some people say make sure your dough has no cracks before refrigerating or else those cracks will expand (causing crust to collapse during baking). So maybe make sure there is an even thickness of your crust being distributed around your tart pan and that there are no holes.

Inga Lam I use butter straight out of the fridge. I think it might be because I rolled it a bit too much? I didn’t roll it big enough and had to do it again but I did put it back in the freezer for a bit before rolling it again.

Some recipes use water as the binder to help it come together so if you used water, it might have evaporated in the oven making it shrink.

I like both pies and tart, but I love making tarts. I’ve made a few tarts during this whole quarantine, from ube cheese tart to a mango chees tart. Tarts are just so fun to make haha.
