Boy am I jealous when I see guys using a nice mixer. We’re off grid here and so I do everything by hand as to not use the solar. I figure that I should do by hand whatever I can and prioritize what I use for solar. I admittedly do like being hands on though too. I learned everything I know about making pizza right here on this great channel. 3 years ago I knew nothing about making pizza. Now everyone I know says I make the best, but that’s just from watching and emulating a master of his craft, to the best of my ability. I'm also a student of your Masterclass ((almost 2 years ago), I noticed that: 1) you didn't use oil in your dough, is that because you were using WFO ? 2). used lower percentage of salt. Is that because you wanted to proof the balls sooner ? thank you Frank

There is something very satisfying about seeing a big close family coming together and having a happy time together over fantastic food.
