FYI... you will get a better lift on the Dutch baby if you preheat the oven with the pan in it and then just pull out the hot pan to melt the butter. I make them all the time... they are an absolute FAVORITE. Also... with the high hydration of that batter you don't need to worry about gluten over-production... you can blend that sucker 'till the cows come home. :)

You also want LOTS of air in your batter so over blending helps aerate it! I think if she hadn't spilled the batter and let the pan/butter cool while she cleaned it up and reheated the oven, she would have gotten more puffiness. You also want all of your ingredients at room temperature.

I've made many marshmallows, and I adore it. I'd recommend starting by making marshmallows with just sugar syrup instead of candies for the experience. Yours did remind me of my first attempt, lol. The temp of the sugar is really important, and I saw someone else mention pouring the sugar in slowly while the machine is on. Even with experience, it's sometimes hard to know exactly when to pour it into a mold so it doesn't do that sticky mess business. Good luck!!

I also recommend this. Gelatin does not like to set after hot temperatures. Letting the "sugar" drizzle down the side of the bowl while it's whipping helps cool down the sugar before it hits the gelatin. Be careful to make sure the hot sugar hits the bowl before it hits the whip though. You don't want hot sugar being flung around. Ouch! You may also need to weigh off the gelatin as the packets are not always accurate. After it's done whipping, you need to work fast to get the marshmallow in the pan.

I hear a lot of people talk about eating more protein. In the last year, I’ve talked to so many people who have had issues with their kidneys. My Dr recently told me that I need to watch how much protein I’ve been consuming. If I had to do the last 10 years over, I would be watching my kidney values and the amount of protein I’m eating. Not a dr, but wanted to share my experience. I would recommend people talk to their dr about this.

I think for the marshmallow thing, from what I understand of regular mashmallow making; you need to mix the gelatine into the water and then leave it. then when you have the hot jolly rancher sugar syrup I believe you need to start the stand mixer and then stream it, kind of slowly into the mixer whilst it's on and then keep whisking for the 10 mins. I'm not going to guarantee that it will work the way I said but, hope it works out if you try it again!! Love your videos!

Dutch Babies aka German Pancakes - (actually "Dutch" being a derivitive from Duetch, which is German for the spoken language) - Best practices: Always PREHEAT your cast iron skillet BEFORE putting the butter in. I usually preheat my skillet, put the butter in, put it back in the oven until the butter is melted, THEN pour in the batter. When blending the batter, I don't tend to use "high" right away, I break up the eggs with the milk first...and then add the flour. Allowing the batter to settle while the skillet is preheating. Also, pour batter directly into the skillet WITHOUT removing the skillet from the oven rack. SLOWLY push rack back into the oven. (so not to spill) The "Rise" of a German pancake is all about the EGGS! (YAY SCIENCE!)

For the Dutch baby, if you put sliced apples in the butter first with cinnamon (sprinkled) while the butter melts, and THEN pour the pancake batter over is Supreme.

Anyone else watching from the UK, and wondered how Rachel’s family haven’t had a Yorkshire pudding before (pancake)

Your problem with the marshmallows was actually the temperature of the Jolly Ranchers. The sugar needs to be around 240 degrees F or 115 C for it to form marshmallows, Taffy forms around 270 F so your Jolly Ranchers were just a bit too hot.

I relly don't get why they call the pancake thing a "German pancake". I've never seen it and NOONE does ay pancakes in the oven over here. I don't know about Danmark but there definitely nothing specifically German about it..
