Recipe for marinated chickpeas: Soak 2 cups dried chickpeas in a big bowl at room temperature overnight, drain and wash them. Add the chickpeas to a pot and bring them to a boil , and cook for 1 hour at low heat. In another big bowl, mix 6 tbsp parsley, 2 cloves minced garlic, ½ cup olive oil, 3 tbsp red wine vinegar, 1 ½ tsp sea salt, 1 tsp dried oregano, ¼ tsp black pepper, mix well and set aside. When the chickpeas are cooked enough, drain the water and add them into the big bowl, and mix well with all the spices. Chop 3 tbsp pickled red pepper strips and add it into the big bowl, mix all the ingredients together. Set in the refrigerate for at least 1 hour to absorb the flavor. Ready to serve.
