LEARN HOW TO MAKE AN AMAZING VEGAN MASALA FRIED RICE RECIPE!
LAY HO MA!! Alright, you have got to try this fried rice recipe. It is incredibly packed with flavour and of course, easy to make. Join me in this episode and learn how to cook an amazing masala fried rice recipe. Let's begin.
Servings - 1
Ingredients:
1/2 red onion
2 roma tomatoes
3 long green chilies
3 tbsp olive oil
2 pinches of salt
1/4 cup curry leaves
1/2 tsp chili powder (cayenne)
1 tbsp sweet paprika
2 tsp garam masala
1 1/2 cups leftover basmati rice
few sprigs cilantro
couple lime wedges
Directions:
1. Dice the red onion and tomatoes. Chop the chilies
2. Bring a non stick pan to medium heat. Add the olive oil
3. Sauté the onions and chilies for about a minute
4. Add in the tomatoes followed by a couple pinches of salt. Sauté for a few minutes
5. Add in the curry leaves and sauté for 4-5min
6. Add in the chili powder, paprika, and garam masala (add a couple splashes of water if it looks too dry)
7. Add in the rice and sauté for another couple of minutes
8. Garnish with freshly chopped cilantro and serve with a couple wedges of lime

This is called as Tomato Baath or tomato flavored rice in The Bangalore region of Karnataka. You should check out some videos at this recipe. The only difference is the rice is cooked in the tomato masala. It's like tomato flavored pulao.

I’d recommend adding curry leaves 🍃 and chilles at the same time so the curry leaves Fry out. And then adding onion 🧅

QUESTION: You appear to be naturally lean. Are you? I have recently cut back on meat consumption for environmental reasons and to a lesser extent, health. Do you ever make a filling meal without starch? I lost a bit of weight ditching starches, but now that I've shifted away from meat as a primary protein source, I find I am hungrier through the day and looking for something I can count on without all the sugars, but fills up the belly - the same way bread does. Dark greens are a mainstay in my one main daily meal. I buy them fresh and frozen.

@@geekwithabs I agree. I like to add curry leaves early on right before the onions and splatter them in the hot oil. It really brings out the flavor.

We do this rice all the time whenever there’s leftover rice.. can also add garlic, fresh or dry prawns...yummy.😋😋😋😋

We add either green chillies or chili powder for a bit of extra kick. This can also be done with a ton of other vegetables, or as a combination of many vegetables. It’s a great “clean out the fridge” side you can make. I sometimes eat it as it is 🤤

This look yum😋 Just a tip add the curry leaves after the oil is little hot & leave it in for 15 to 20 seconds than add onion, tomatoes etc...this way the fragrance from curry leaves comes out...

Simple intro to Indian food and a great way to use leftovers. I would start the sauté with cumin followed by the curry leaves (get crispy and infuse oil better) followed by the rest of the ingredients:)

Not only add lemon, also add jeera and let it splutter at the start of the tadka. Also add turmeric, vegetables and have some salan on the side. Onion and tomatoes as a salad would be lovely.

I recently started watching your recipe videos and I love how all your recipes are simple and easy to make. One thing I want to point out to you is, always put curry leaves in hot oil, before you put anything else. That will enhance the flavour of curry leaves more and the dish will have the flavour of curry leaves.

@Wil, I'm Indian. There are a couple of points I would like tell. First and foremost: the general rule about Indian cooking is browning onions. Always cook until the onions are brown. There are times and dishes when it is cooked till translucent. For this recipe, it's upto your choice. But don't leave them undercooked. Next swapping out curry leaves for kafir lime leaves or bay leaves may be suitable for this recipe but you can't substitute it. If you are using curry leaves, the rule of thumb is to add it into the oil first and let it flavor the oil. Same for Indian bay leaves. Then add in your onions , chili , garlic etc. If you are flavouring the oil with curry leaves, please add in the chillies soon after. Do not add chillies with onions. Please make sure that the masalas i.e. coriander, chili, garam masala have fried a little in the oil. They should not boil in the tomato juices or otherwise. Even if they are added with the tomatoes, you cook till they fry .

When I make fried rice I add a few vegetables too. Or just half a can of garbanzo beans. Also, I crush the curry leaves before adding to release more flavour. Thank you for the recipe.

Thanks for this simple recipe. I often make this. Like the way you said, it’s so easy with simple ingredients. You can also chop the curry leaves if they are too big. And you can add some more steamed/ cooked veggies like potatoes beans cauliflower. And you should eat with raitha (yoghurt with grated cucumber or carrot or diced tomatoes and ofcourse with little salt added to the yoghurt). It will be yummy!! 😋😋 Thanks again. @yeungmancooking I make an identical version and it’s such a quick option during busy workdays. I add some shishito peppers too if I have them as they are so fragrant, crushed ginger along with onions and a dash of sugar to the tomatoes. It lifts up the flavors in a subtle way. I understand some viewers use curry leaves for tempering. I use them both ways. Add fresh in dishes like this and temper when adding to gravy or dal. It’s a staple in my kitchen and I use curry leaves everyday. Thank you for yet another excellent dish! 😊
