Hm I really agree with what the owner said that it’s not being “elevated” vs. traditional but that the Asian American (Vietnamese American) palette is different than a pure Asian (Vietnamese) palette. I think I feel offended when places say they’re “elevating” traditional food because usually they mean that they’re just making it more Western (which then inherently means that the Western palette is somehow superior). Ex. Karen calling herself the Queen of Congee by “elevating” congee by making glorified oatmeal. 🙄🙄 I really like what they’re doing here. They’re not trying to be “better” they’re just trying to tell their own unique experience of being first gen through food.

"Elevating" is just another word or excuse for jacking up the prices. Increasing prices doesn't make the food taste any better. "Quality" ingredients is also debatable.

I am white. And I agree. And, I do prefer Vietnamese food traditional than fusion or Westernized. When people say they are "elevating" a dish, it has a value judgement, meaning the new product is superior to the old product. This only serves to offend an entire culture and history. That being said, I like how this restaurant seems 90% traditional with a 10% injection of Vietnamese American diaspora.

I enjoy your watching your channel! I too love vietnamese food I eat banh mi's almost every other day. Nuoc mam is probably my favorite sauce I keep a bottle in my fridge. Every state I have been to I look for vietnamese restaurants. I live in CT and have not found anywhere as good as pho 501 in East Hartford. They only serve beef pho and spring rolls on weekdays and it's damn good. I am always trying to find a place that comes close but the 100+ other vietnamese restaurants I've been to around the US always fall short of pho 501. If you guys are in the east coast near CT I really recommend giving it a try. It's mind blowing.

Ginger scallion sauce is common from Cantonese chicken dishes as a dipping sauce, which is where they got that inspiration for the Pho Ga.

Agree, same in Toronto in the downtown core there is this place that sells banh mi called banh mi boys but they sell it to the "new generations" and to people who are not familiar with viet food all they did was toast the damn thing and the sandwich cost like $10+tax when you can get them for $3 smh...

@@neofusionstylx doesn't have to be cheap but just naturally is because it's very simple ingredients. That's why it's outrageous for a $20 pho bowl. Especially when it tastes the same as the $9 bowl I get at my normal spot... It feels dishonest to the customer at least does to me as a customer. When I can create the exact same flavors with the exact same meat why am I paying $20 when I get paid $9. I love prophet, I love capitalism, but that's neither of those.

with the amount of beef served normally it's ridiculous that pho is that cheap lol. this is standard prices for more upscale places tbh, 11 dollars for vegan/egg dishes, 14-16+ for meat ones depending on cut and preparation
