I think it's to hold out longer until trial or until she gets offered a plea deal (if she does). They might ask her to plead guilty & in exchange they'll lessen her charges. That's usually why most obviously guilty people plea not guilty, not because they think they have a chance to beat the case.

Yes, its harder to prove in court if you didn't walk out of the store but if you had the intent to steal and it is obvious, then youre still going to face charges. I work in fine Jewelry. I don't let items leave my sight, get packaged by anyone except myself or my colleagues, and I do not let anyone handle more than 1 item at a time unless they have already paid in full lol.
