Please say a prayer for us. Here in Grayson county Va. and the city of Galax it looks like a war zone. I live in town so I was only out of power for a bit over 24 hours. Our water plant was devastated. Water is spotty and nasty. Internet is off and on...buffers a lot and phones don't work at all. The New River that flows through here crested at 22 feet over flood stage. 98 percent of the people here have no power, phone service, internet or water. I have never saw anything like it. Many roads and bridges are gone. Trees down everywhere. Campers, cars, buildings, and even horses and cows are gone. I am one of the very blessed ones to have power now, and internet at times. The water is sporatic...but I can flush! The only flood on record here with a higher crest was in 1940 at 24 ft. There is more devistation now then during Hugo. Recovery is going to take a long time.

I am saying prayers for your area and all others hit so hard. I know What it is like to be devastated by hurricane damage! As we got, older, we decided to leave Louisiana rather than run from them. Both of us are not n very good health and running is no longer an option . We moved to northwestern Arkansas, about 14 years ago. It was the best decision we ever made! our prayers are with everyone hit by this deadly hurricane!! 😢❤May our Lord treat you kindly in rebuilding and keep you in His hands through the recovery process!

Hi Mel! I'm all in for crock pot meals. My favorite way to cook all year round. Lol! Oh man does that meat sauce for the pasta dish look delicious! I have to try it. Need to try the garlic parm chicken pasta too. Who am I kidding, I need to try all of these. I'm so excited to have some new crock pot recipes to try this Fall and Winter! I've heard so many good things about the Chili O seasoning but haven't tried it. I'm going to make a point to get it. I'm a plain chili eater. Just topped with cheese with a side of corn bread. I love salisbury steak. Yours looks good. I'm looking forward to trying the yummy looking desert. I'll take some to my neighborand her husband so I don't eat all of it. 🙃 Love that all of these recipes can be cut in half and I'll still have lots of leftovers, which you know makes me so happy. Saying a prayer right now for your community, the devastation is unbelievable. Only God can give grace and encouragement. I’m praying He speeds up recovery time as well. I’m so sorry! I went through Hurricane Camille when I was about 6, I went through hurricane Katrina as well. So my heart is breaking for all of y’all affected.

That pumpkin lava cake looks amazing. I always forget about tortilla soup for some reason (I also have a recipe for Taco soup that I love, I think more). I think the Cajun chicken soup is essentially a hearty Italian soup without Old Bay or Cajun seasoning, those seasonings are pretty pronounced so would be considerably different tasting without them. I have yet to buy that Buffalo WW's sauce... I have seen a few recipes with it. I don't like real tart things, so hoping it is not too vinegary. 😊

I make sweet corn bread (using the honey jiffy corn bread box and adding some sugar) crumble it up in my bowl and add my chili on top then cheese sour cream and green onions… By the way I’m making a version of your creamy chicken taco soup in the crockpot for dinner tonight. My family loves it.

Mel, you could also add in some pasta and make Cajun pasta with this soup, if you get tired of it this way. While your cornbread is baking add in some pasta to the slow cooker and stir it in , cover and cook until it is done. Try topping with some chopped green onions and fresh parsley. 😋

If I ate supper that late I could never sleep. I might would wait and eat that supper for breakfast. lol I love to pop open a small bag of Fritos and spooning chili right over those Fritos just like we did at the ballpark where our sons played baseball. Add some cheese and sour cream! We love it this way! No bowls or mess to clean up with dishes!

I love Joanna Gaines Corn Spoon bread recipe which is more like a casserole. Her husband, Chip's favorite way to eat chili, is to put a giant scoop of the corn spoon bread in the bowl, and then pile the chili on top. I agree it is absolutely fantastic!

Our church just sent a load of diapers, water, food and tp to Hot Springs NC yesterday and EVERYONE here in East Tennessee is collecting and sending supplies and volunteering to come help. I say this not to sound braggy but to give you hope that this entire region has you in our thoughts and prayers and we are here for the long haul to help.

Mel I too do not like dishes too saucy so the first recipe is perfect. I love the bow tie pasta in it. The chili recipe calls for Frenches Chili-O which I have never heard of. Does it take the place of chili powder? I love all your stuff but if I ate like this very often I would be big as the side of the house! I watch calories constantly and I am trying to tweak some of your recipes down a bit to save on calories.

What a lot of people misconstrued about Cajun cuisine is that everything is hit with pepper! Cajun food is about the layers of flavor in a dish. It is about the mixture of spices and how you want that dish to taste…which should be a balance of flavors. Yes you can make things hot to suit you if that is what you like, but spices do not and are not suppose to overpower whatever you are making. You can add a tiny bit of cayenne pepper, but remember as a soup or dish cooks it is going to develop the amount of pepper you have in it. So add just a tiny bit and let others add more at the table. My whole family loves the heat, hot fresh peppers 🌶️ served with stews, beans, peas and even meatloaf! Anything served with rice or cream potatoes! 😂

It's got a little kick to it, but not like a hot sauce taste it's a little more tangy hot. Use it conservatively when you first try it and you can always stir a little more in after the dish has cooked too.

I buy the kroger brand that isn't a wing sauce but garlic parmesan and we dip cheesy bread and french fries in it. But really love baking chicken after marinating in the sauce, of course dip on the side!

I hope you are well. We've been through many hurricanes in South Louisiana. Our electric plant was ruined three years ago and is still not rebuilt. We are buying it from another source. But I am glad to have it. Ida was a bad one that ruined many homes and businesses. Many are still not built back. FEMA did not help them.

Livinglife8333 - Well then, you REALLY would not like blackened chicken! YumYUM!! I am born and raised in Louisiana and like the blackened taste!!!! However, if it is not done properly, it will NOT taste good at all!!!! The fire roasted tomatoes are a wonderful flavor addition to most of my dishes! I like it blackened OR, not blackened! Either way!
